(I Ate) Perfect Barbecue

I'm not expert enough to tell you the style (California, it was not), but if I had to guess, after looking up definitions, it was in the Memphis vein. Dry rub, served bare with a red bbq sauce served as a condiment, to each his own.

I knew the dinner was going to be barbecue ribs, so was glad to learn there was also some chicken. I'm not usually a big fan. The flavor is always great, but I often end up with a headache and a stuffed feeling (not from overeating). It's usually too much fat (which one cannot politely pick out with one's fingernails) and too much sugar. I had a piece of chicken and a couple baby back ribs. Both were moist and tender but neither had lumps of fat. The rub probably had a little sugar in it, but not enough to announce itself. There was also paprika, garlic and onion, and I think a few more minor notes, but it was family friendly. Very tasty but not particularly spicy. The sauce was flavor packed, a little sweeter, tangy, but not sugary nor spicy. I like spicy, but the old folks and kids don't. :) This was good enough and flavorful enough not to miss the heat. It was also very well balanced.


Of course, there was ice cream for dessert, which makes up for the sugar and fat, but that's another story. :) The dinner was just good food. No headache. No blah feeling. Very satisfying.


I've been known to slosh some barbecue sauce on something roasting in the oven, but that's not even close to actual barbecue. I had a weenie roast once, and did use a charcoal barbecue, but the sausages were cooked, so they only had to get hot. That's the closest, this side of Girl Scouts cookouts, that I've gotten to barbecuing, myself. I don't know how hard won the expertise was that produced tonight's dinner, but I could be tempted into the fold if I didn't have to put in years of practice to perfect the craft.


I know Ricky is a former champion and Lars uses his green egg a lot. Do the rest of you barbecue? Any tips to share?
