Strawberry Truffle Tart

Had company for lunch today and made this tart. Fun it in a mystery book -- The Diva Cooks Up a Storm by Krista Davis. I've not made any of her recipes before but this tart is definitely a winner and I think it would be equally good with raspberries!




STRAWBERRY TRUFFLE TART


(There was a recipe for a tart shell but I just used my own piecrust recipe). Which I baked blind so it was ready to fill.


Filling:


1 1/4 c. heavy cream

12 0z package semi-sweet chocolate chips

2 t. vanilla


Heat the cream until very hot but do not bring to a boil. Add the chocolate. Stir until chocolate is dissolved. Pour in the vanilla and stir to mix. Pour into prepared tart pan. Set aside until cool. Refrigerate until set.


TOPPING:


1 1/2 pounds small strawberries

1 c. heavy cream

1/3 c. powdered sugar

1 t. vanilla


Wash and hull strawberries. Cut in half, lengthwise. Place on top of the chocolate in a pleasing pattern. Beat the cream. When it begins to take shape, add the powdered sugar and vanilla. Beat until fairly stiff. Pipe decoratively around the top edge of the tart.


She recommends placing the rest of the whipped cream in a bowl and serving with the tart. I just piped a bit more.


It got 6 thumbs up at our luncheon and for a wow dessert -- I will make again!
