A good buffet luncheon

Yesterday DS and DH and I attended an accepted students day event. There were lots of ongoing activities happening simultaneously so people came for lunch at different times. 1000 students and families were there. They did a really great job, in my opinion and I wanted to share the menu here since we often post about menus.

The buffet line started with a green salad station; separate bowls of romaine, grated carrots, croutons, cherry tomatoes and 3 dressings.

Next was bread - split rolls, and croissants.

Then, meats; platters of sliced marinated flank, and chicken salad.

This was followed by additional sides(none of these included cheese which I think was great, too often people throw cheese into everything which makes it complicated for many eaters): potato salad, farro salad with artichoke hearts and sun-dried tomato, edamame and mixed bean salad, fruit bowl, roasted vegetable platter, and large bowls of potato chips.

I thought this menu really had something for everyone, even the pickiest eater.

FYI - There was also a separate dessert table with awesome cupcakes.
