Which countertops for our bungalow tuxedo kitchen?

We are in the final stages of our kitchen remodel and need to pick a countertop stone. The home is a 1914 Bungalow in the northeast, but the kitchen will feel more modern. It's a two-tone/tuxedo kitchen with a greyish navy on the lower cabinets and pantry and a greige on the uppers. Shaker-style cabinets, no island, the flooring is the original quartersawn heart pine (reddish). Appliances and sink are stainless. Backsplash will be tile TBD. We do have an interior designer advising us, but I've gotten great advice here in the past.

Our inspiration images (e.g. this: https://cdn.remodelista.com/wp-content/uploads/2015/03/fields/Goode-Kitchen-Amagansett-Siosi-Design-Remodelista-02.jpg) have soapstone counters, but that is too high maintenance. For similar reasons, not interested in marble - but we strongly prefer a natural material, not quartz or the like. The original plan was to do a granite soapstone lookalike in a honed finish (something like Jet Mist), but after yesterday's visit to the stone yard, we are now not sure and are thinking we may prefer a lighter stone. We are told we'll need 2 slabs.

Here are the cabinet colors:

Lowers: Maritime (https://www.diamondcabinets.com/products/finishes/maritime/maple)

Uppers: Dover (https://www.diamondcabinets.com/products/finishes/dover/maple)

Here's one corner of the kitchen that shows the uppers and lowers with some of the flooring - this is one end of our longest counter run and likely this is where our one seam will go (either somewhere in this corner or by the sink).

Here's the layout. The range is actually induction, not gas.

Here is the lower cabinet (except a slab, not Shaker) with some of the options we liked at the stoneyard yesterday.

1. Silver Grey granite. This is nice because it's lighter than the Jet Mist (which seemed too dark with the blue cabinet).

2. Viscount White granite. Looks good here, but too much movement and I worry about the seam looking funny.

3. Dark horse, and double what we want to spend, but my husband loved this. White Macaubas quartzite.

4. Original plan: Jet Mist. Maybe seems too dark, although this was a dark warehouse.

I know there are some folks on here who are amazing at this kind of thing...please let me know what you think!
