Bannana Oat Bread recipe for Party_Music
Sorry it took me so long to get to this! I get a lot of compliments on this bread, it is not the same old same old. But it's lower sugar so doesn't have the shelf life of the richer banana breads.
Banana Oat Quick Bread
Bake at 350 degrees for 45-50 min. (50 most likely) in a 9x5 greased loaf pan.
1 1/4 cup unsifted flour
3/4 cup quick oats
1/2 cup firmly packed brown sugar (you can cut this down to 1/3 cup)
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt (I would use half of that amount since I try to cut out as much salt as I can tolerate)
3 TBLSP vegetable oil (my "go tos" are canola or light olive oil or grapeseed)
2 eggs beaten
1 cup mashed banana (2 lg. or 3 sm. ones)
1/2 cup maple syrup
Stir together banana and eggs, oil, sugar and syrup. Mix dry ingredients together well. Add to wet ingredients, mix well.
Turn into 9x5 greased loaf pan. Bake until wooden pick inserted in the middle of the loaf comes out clean. Cool 10 min.
