What to do with beet greens and chard?
Comments (14)I don't care for greens that much so I hide them in lasagna or soup. However, I froze all the Swiss chard I could get to make this wonderful vegetable tart. I make it once a month at least as a side dish but is good as an appetizer too. It takes 2 pounds of chard and when ribs removed and chopped up is about 6 cups before slicing into wide ribbons then cooked for 10 min to soften. You can also make it with other vegetables like squash or turnip greens if you Google erbazonne. Lidia's Italy is a show on food channels or sometimes on public broadcasting stations and who has authored several wonderful cookbooks. This particular recipe is simple to make, the dough is basic and foolproof. The combination of chard, cheese, ricotta, garlic and eggs is magical and delicious hot or cold. The recipe URL is missing the ricotta - add 1 cup or more with the eggs. Her dough is here: 2 cups unbleached AP flour, 1 tsp salt and 1/2 cup evoo. Mix it in the food processor adding 1/3 cup or less ice water, knead for a minute or two, wrap in plastic and refrigerate for an hour before rolling out. It is made on a jelly roll pan with the edges free form to wrap over the filling for a couple of inches only. Now that you've reminded me, I think I'll go make some for Thanksgiving! Comments (25)We had Meatloaf that was okay...DH wanted Beef stew. I hosted my Book Club today, so I was busy cleaning and making desserts. Made Key Lime Pie, Banana Bread and some little chocolate cream puffs. Everything was good, (banana bread was all gone) but the cream puff things were kind of so so IMO. Chile sauce ala Chase is a tomato based relish, it's sweet, a tiny bit hot and a little spicy: CF--Chase Recipe Introduction A bit of work but it tastes so good and your house will smell divine! Elaine's Chile Sauce 11 Q basket (1/3 bushel) of field tomatoes peeled and smashed 7 Cup white sugar 4 1/2 Cup cider vinegar 2 Bunch of celery chopped 4 small hot peppers chopped 4 large sweet peppers (2 green , 2 red) chopped 4 large onions chopped 1 Tbl ground ginger 1 Tbl cinnamon 5 Tbl coarse salt 2 Tbl Pickling spice tied in a cheesecloth bag Simmer/low boil chopped veggies with tomatoes for 2 hours then drain off 2 cups liquid. Comments (7)When I did a search for photos, they (monogerm) look like typical beet seeds (fruit?) just smaller. What I received look like poppy seeds but blacker whereas poppy seeds often look a blue-black color. Would a company that sells seed internationally go through the trouble of removing the actual seeds from the shell to save on shipping? Maybe they have factories in China where labor rates are probably like $1.20 per day (8-10 work hours) and have crews smashing open beet seedpods and harvesting the actual seeds inside. I know commercial tomato seeds are de-fuzzed for weight reduction, maybe disease reduction too, but beet seeds?? What is your job? "Beetcracker." The other problem from the same vendor was Stevia seeds that turned out to be basil once they germinated.
