I finally made Linda C's Caramel Covered Cheetos

Back in 2007 I copied a recipe from the Cooking Forum posted by Linda C. for Caramel Covered Cheetos. As predicted it was a hit with friends and neighbors. The thread was quite lengthy with many former folks that participated in this forum and the reviews were raving. This dates how long I have been lurking in the background.

I am planning on a second batch for New Year's Day snacking. I do not know how to post the recipe however maybe Linda C will see this and post it if there is an interest.

They really are surprising good!. Here’s the recipe I have.

2 cups light brown sugar

1 cup margarine - yes, for this one you must use margarine

1/2 cup light corn syrup

1/2 tsp. baking soda

1 - 21 oz. pkg. CheetosÂ® - crunchy kind

Mix sugar, margarine and corn syrup in pan. Bring to a boil. Boil 5 minutes, stirring often. Remove from heat and add soda.

Stir until light in color and foamy.

Spray a roasting pan (deep 10 x 14) with Pam. Put CheetosÂ® in pan. Pour the mixture over CheetosÂ® and stir, coating each piece.

Place in oven at 250 degrees. Bake for 1 hour stirring every 15 minutes. Immediately, pour onto wax paper, or cookie sheets, sprayed with Pam

. (This is the hard part.) VERY QUICKLY spread out as thin as possible. If not quick and spread out as thin as possible, you will get a big hard glob.

After about 5 minutes, pull/break these apart even more and loosen them from the wax paper. If you don't, you'll have wax paper stuck to them when you go to eat them.

You will regret it if you don't double the batch as guests are going to demand MORE! You can bake batches together and add an extra 20 minutes to bake time. I do them separately because of having to work so quickly to keep them apart at the end. The one batch can almost get too hard while working with the other batch.

Caramel Covered Cheetos? I thought I'd seen all the odd treats, but I missed that one. I do need a white elephant gift.......

We got hit here too, 8 inches of very heavy wet stuff. I spent 2 hours shoveling the driveway, the deck, the backyard. Cooper is afraid of the snow and he pooped in the house twice. He's a Michigan dog, fer crying out loud. I finally just tossed him out. He got even by chewing up the cat's catnip mouse and throwing up. We're supposed to get another foot, at least, and we have blizzard warnings. 50 MPH wind gusts, blowing and drifting, white out conditions. Yup, it's winter and it's Michigan. The snowplow plowed me in this morning, Ashley never made it to work/school. There was a 3 foot wall of wet snow at the bottom of the driveway but I just put the Jeep in 4 wheel drive and went to work, not a hesitation. Have I mentioned that I LOVE that Jeep? LOL. We'll see what tomorrow brings, and I have to get out to the farm and check tanks and hay feeders too. It's about 10F here now, but the windchill is way lower than that. Annie

Well, dixiedog, maybe if you had just made it, made up a name for it, & served it without any comments about what it was made of, they may have tried it & liked it. That's pretty much what I did with my family. I just made it, put it in a bowl on the snack table, & let everyone try or not as they wanted to. The general overall impression was that it was good. Personally, I didn't think it as good as I'd hoped it would be, but it is definitley not bad, either. After everyone had tried at least one bite, & asked what it was, I let them guess. No one guessed Cheetos, and no one stopped eating it when they were told, either! ;-) Rusty

UPDATE: I was at very large youth sports complex Saturday and Sunday. When I check in Saturday AM I offered the tournament director some CC's. Sunday he came looking for me, when he approached me I thought perhaps he didn't receive the entry fee I sent he. He finally found me, asked if I had any more CC's. I said I did in my car; he said he would walk me to my car (far away in a big parking lot). I made a bag full, he was happy and he said he was going to dangle the bag in front of the UIC (umpire in chief) because he loved them too. I asked if going forward I could pay our tournament fee ($400) in CC's? He said "Ms Cathy that's doable!".

I made them years ago and my sister’s been making them since. I’m sure they’ll make an appearance within the next couple weeks. Not sure why we have them during the holidays!

I have a Caramel Corn recipe that is almost the identical (popcorn instead of Cheetos). The margarine has me shaking my head. It has such a distinct flavor compared to butter. Have you ever used real butter?

Same as FOAS, I tried them once then gave my sister the recipe. They were also called 'goose poop' in the recipe I had, which is what she calls it. She already made two batches last weekend.

ratherbesewing, I cannot remember whether I used margarine or butter. Many people say that butter works fine.

Is it an absolute to use margarine? I only have butter and don't/won't make another trip to the grocery, about ten miles away, today.

They are remarkably good and seriously morish . I don't make them for the holidays anymore. They have moved on to Super Bowl fare and are always a big hit.
