food grade flaxseed oil to finish wood?

I recently used a water based stain on a project, and am pretty happy with the result. however, the finish is a bit bit dull. I really want to avoid urethane / varnish type products (which also rules out the cheap kind of linseed oil that contains hardeners). I really like the look of natural oiled wood.


I'm thinking of using some food-grade flax seed oil that we already have on hand (flax is the same as raw linseed). will that work? totally fine if it has a super slow dry time. this is a frame around a skylight, so it's in a very out of the way area. the wood is pine.


I know that for cutting boards, you have to re-coat your oil fairly often. but I'm assuming that's because we wash them frequently. maybe that wouldn't be a problem with a piece of wood that never gets touched? or maybe it will only need rare touchups, a few years apart? correct me if I'm wrong.
