Cheesecake with a Raspberry Ribbon

Along with the obligatory pumpkin pie, which we had in both "regular" and gluten free versions, I decided to make something with raspberries. My Mother loves raspberries and my raspberry canes managed to produce prolifically this summer, so I have berries in the freezer.

I decided to make a cheesecake with a chocolate crust and some of those raspberries, and finally settled on a cheesecake with a raspberry ribbon. I pressed the berries through a sieve because Mother has a bridge, Dave has an implant and Amanda has diverticulitis. The seeds bother all of those things, so I took out as many as I could. The crust is made of gluten free chocolate animal crackers, so Amanda could have a bite if she wanted, not too much because she is both celiac and lactose intolerant.

Anyway, it came out well and looked pretty. I'm not a cheesecake fan so I didn't try any but there isn't any left, so it must have been OK. Cheesecake lower left corner, of course...

And a lovely red ribbon running through the center, made it very festive for the holidays...

Yummy! Wish I had some. Hubs made his usual cheesecake but I didn't realize that the box of graham cracker crumbs we had in the pantry had an expiration date of 2007! Needless to say, they did not taste good, even though the crust looked good. It was OK when you scraped off the crust, but he used cottage cheese for part of the cheese, which left weird little lumps . . . he and I don't have the same taste in cheesecake. I like some kind of berry topping on mine too.

What are the cupcake things?

L. I can't imagine that graham crackers crumbs over a decade old would be good. Whew. I tossed all the outdated stuff from my pantry when I moved to the farm, and now it's time to do it again. I've never heard of using cottage cheese in cheesecake, though. I do use it in lasagna in place of ricotta, but never heard of doing that for cheesecake.

I meant to post this picture with the original post, but somehow it didn't get "attached"....

The cupcake things were cupcakes, red velvet. The little pumpkins were also red velvet, made with these pans:

I did a separate post on those. The cupcakes were frosted with cream cheese frosting and topped with sugar turkeys...

Linnea56: You can use mostly any fruit that you or your husband likes and sweeten it to your own taste. I like Pineapple topping. *************************** Put a can of crushed Pineapple in a Sauce Pan and simmer it awhile, until the pieces soften a little. Add sugar to taste. Mix a tablespoon of Cornstarch in a cup of cold water and add to the simmering Pineapple. Stirring until it thickens a little. Use more Cornstarch if needed. Let it cool a little and pour this over the CheeseCake. You can use many Fruits but I wouldn't pour the fruit from the can over the Cheese Cake. Some other good choices are Blueberries, Cherries and Peaches cut in large size pieces. Couple of things....that's 3 pounds of cream cheese...PLUS a cup of cream and 3 oz of sour cream and 6 eggs! That's HUGE!!! It would take easily a 10 inch spring form pan.... And you say you don't like orange flavor....leave the orange out....just sub about 1 1/2 tsps of pure vanilla extract in the cream cheese mixture....and either put lemon in the cheese mix or put some lemon peel in the crumbs for the crust....or put a little cinnamon in the crumb mixture... I think it'll look lovely...but try it out before the day. The corners could be tricky and not meet your standards. When you say "club" I'm assuming you mean quite a number of people, rather than a few you can fuss over for an hour. Something you can try if the cutter doesn't cut cleanly is to use it to mark the shape, then use the tip of a paring knife vertically to make the cutout. Or you could cut it diagonally, like baklava to make diamonds, and then freehand cut the base out of one point. Or you could cut triangles and use a blueberry as the base and a half a raspberry as the angel on top. With any luck, it'll just cut cleanly. Do clean the inside of the cutter between cuts.
