Gluten free pie crust that works

OK, so it's not as good as "real" pie crust, but it isn't bad. It's flaky and can be rolled out like a "real" crust, but you have to work fast, as it gets really soft as soon as it gets even a little warm.


It's made with mostly butter and some lard, and the whole mess is dumped on the counter and "smeared", using the fraisage method, which makes flaky layers:




Roll it between two sheets of parchment and it can be picked up and placed in a pie pan:




The crust was flaky and stayed together in a slice, although it was more crumbly than my usual pie crust:




The recipe came from Gluten Free and More and makes two crusts, so one is in the freezer, waiting for Christmas.
