alternative to pie crust....phyllo?

I'm having some ladies over for dessert and am running into dietary issues. I was thinking of having stewed apples with ice cream. Some of us might like a "crust" with that, but others are GF or low carb or whatever. So I'd like to serve something separately that can be used sort of like a crust or omitted for those who don't want it.

I was thinking about cutting rounds of phyllo dough and baking it and serving it on the side. Would that work? Or are there better alternatives? My MIL used to make "pie crust cookies" out of scraps from when she made a pie, sprinkled with cinnamon and sugar. Should I just make a regular crust and roll and cut into shapes? Or maybe just make a short cake?

I'm open to suggestions.
