Comments (19)I can answer the question as to why you need to get MORE cfm's than you think you need. The reason you run the unit lower than the high has to do with the physics of the air in the duct. When you run the unit on the highest setting you create turbulence inside of the duct. This in turn leads to the HOGS returning to your kitchen " back at ya" as it were , rather than venting them out. This is a fact. This is why I have 1400 cfm in a 54" hood liner. I use it on medium and low. Mine is quiet even on high but I don't need the high setting. I have NEVER had to clean one spot of grease off of my wooden hood or the surrounding cabs/shelves. There is never any residue ever at all. I do have direct splatters on the wall behind the cooking pot at times when DH woks but other than that the HOGS are all removed completely. I read the article sited and had a problem with a lot of what he said. I don't have any unsealed fireplaces in my home and my waterheater is outside on the wall of the house . Since our house is an 1890 the problem of drafts and makeup air doesn't exist for me , which I am glad of . As far as I know there is no code here, or wasn't at the time of my install. I am glad of that too. We need the cfm's that I have since I see the result on the baffles every single Sunday when I clean them...they are all gresy greasy gressy. I also can't tell what is cooking in the kitchen at all even sometimes when I am standing in the kitchen. It sucks LOL. The other thing that bothered me about the article and the backdrafting etc was that the implication is that you run the hood for great lengths of time. In all of my experience that is not the case. Wok cooking requires minutes as does deep frying. I never have it on for more than possibly 30 min. and usually way less than that. Comments (28)You're mixing different terms, and that's causing confusion. A Bertazzoni is very much a consumer range and most definitely not a commercial range. You would never see it in a restaurant kitchen. The dimensions just wouldn't fit. And it probably also wouldn't stand up to the daily abuse. Also, most professional chefs would be put off by the small amounts of BTU. Professional cooking is all about speed. Most ranges start at about 30kBTU for all of the burners. What you have is a residential range that has been styled to look more like a commercial range and that has some of the features that would be useful to both a professional and a home chef. But it still has all the safety features and the dimensions of a residential range. That's why you can install it next to kitchen cabinets and why you can get away without a fire suppression system. And yes, there are plenty of those brands. People frequently refer to them as prosumer, as they want to establish a clear distinction from lower-powered conventional consumer models. Comments (31)I was biting my tongue and tried not to comment on the original design. It didn't look really all that useful, but I understand that everybody wants to have their island these days. Now that you posted the G-shaped layout, I don't need to hold back any more. Whew. The G-shaped designed is just so much more functional. It's no contest. I would absolutely prefer a kitchen that I can effectively make a meal over a kitchen that follows the current design goals. And yes, I do agree with the KD that the peninsula looks more old-school. But that doesn't mean it's always the wrong choice. If you do have money to burn, I wouldn't spend it on a bigger stove. Seeing this drawing, I think your existing range is just fine. But you could spend the extra money on a great workstation sink. It'll make clean up and prep so much easier. Take a look at rachiele.com. It's a great site to learn about what makes a functional sink. I love Dino Rachiele's sinks, but even if you end up buying from someone else, use the resources that he provides. And if you really want something cool, get a Miele combination steam oven. Such a useful appliance. Comments (28)I’m trying. Unfortunately, i signed off on it. Lesson learned. We‘re adding cabinets next to the fridge to give it room to open and pushing the others down. I’m not sure I prefer a small counter area for a coffee pot or the long cabinets more, but it should help with the fridge issue. They added the fascia and crown to the top of the ceiling as well. After I pointed things out, it seems like they’re wanting to fix as much as they can on the plan. Not wanting to budge on the Dishwasher issue so far because of the plumbing already being done though. Maybe I can change the island without altering the plumbing lines?
