ever made tamales from scratch

so last weekend, on "America's Test Kitchen" (or maybe it was "Cook's Country"), they made tamales with a red chile filling in the masa. and they made these potato and chorizo tacos. it's to hot to do anything outside, so gonna give these a try.


Have NEVER made tamales in my life, but I have all the ingredients and it looked like something I could handle... not saying they'll look beautiful.


my brother and wife are coming over to visit this weekend. they are adventurous eaters and I plan to make them be my guinea pigs.


can I make the tamale dough ahead of time... like day or 2 ahead and refrigerate. can the dough be frozen? can assembled/uncooked tamales be frozen?would like to try ahead of time in case it's a total fail.


actually I don't have all ingredients. need a substitution for ancho powder.


any tips, hints, suggestions, encouragement?
