Seagrass' rhubarb coffee cake

Yes, I had to cut the rhubarb, it was time.

Seagrass posted a recipe for a rhubarb coffee cake that had no oil or butter, just a cup of yogurt, and she said it was easy and moist and delicious.

We had some company for dinner Friday, an old friend that Elery used to work with, along with his wife and 4 year old grandson. He's diabetic and I thought that I could make this "work" for dessert. I used white whole wheat flour, some of my homemade nonfat yogurt and the chopped rhubarb. The crumbled topping was made with brown sugar Splenda and I served it with some sugar free ice cream.

It was surprisingly good, so many "healthified" recipes are not, and Elery is still snacking on a couple of pieces that are left. I did put some in the freezer to see how well it would react to freezing, but much of it was eaten.

Thank you, Seagrass, for a recipe that I'll use again. I think it would also be good with apples or pears, so I may try those another time, although the rhubarb version is really good...
