Comments (4)May I suggest a "tira mi su" cake? It is easy and delicious. Recipe: Ingredients: 1 tub of cool whip 5 eggs separated 1 container of philadelphis cream cheeze 1 1/4 cups sugar about 3 tablespoons powdered cocao 2 packages lady finger cookies 6 (small) cups expresso coffee (or 2 cups strong american coffee 3 tablespoons rum or rum flavoring 1/2 teaspoon cinnamen Directions: Beat egg yolks and sugar until well combined. Beat in cream cheese. Beat in cool whip and cinnamen until the mixture is smooth. Separately whip egg whites until they are firm. Fold beaten egg whites into mixture until mixed. In a flat bottom bowl combine coffee, rum and about two tablespoons sugar. Dampen the cookies in the coffee mixture and make a layer of soaked cookies covering the bottom of a large casserole dish. Cover the cookies with a layer of the cream mixture. The repeat the process making another layer of cookies and then a final layer of cream. Using a tea strainer sift the powdered cocao and spread it to cover the top of the cake. If desired you may grate flakes of dark chocolate on top. Place in refrigerator for two hours. Comments (24)If it isn't really humid, this is so, so good. It looks elegant and tastes just out of this world. I've not made it with Splenda. But if it's warm and humid it will pretty much ruin it. Google it and look at the pictures. So pretty! This is the recipe I used but there are tons if you Google. Have a great time with your family. PAVLOVA WITH BERRIES (Meg Kat blog) 4 egg whites 1 C sugar (or granulated Splenda) 2 tsp cornstarch 1 tso vanilla extract 1 tsp white vinegar Whipped cream - Berries macerated in a little sugar Preheat oven to 300 F and line a cookie sheet with parchment paper. I like to use an 8 or 9" cake pan and pencil to trace a simple round outline as a guide for pouring the meringue. (Turn paper over so the pencil is on the bottom of the pan.) In a large (and very clean) mixing bowl, whip egg whites until you have firm peaks. Slowly add the sugar while continuing to beat until stiff peaks form. Now mix in the cornstarch, vanilla, and vinegar. Pour mixture into the center of the circle and gently spread with a spatula until 2 or 3" short of reaching the line (it will spread out more while baking). Make an indention in the middle to hold the whipped cream and berries. Bake for 1 hour in a preheated oven then turn off the heat and leave in the oven until it has cooled. Top with whipped cream and top with strawberries and/or blueberries. (I macerate the berries, but use a slotted spoon to place them on top. (You don't want the juice.) You can leave the meringue in the oven over night to dry out. I would whip the cream when you get there and fix the berries, too. Just pack the meringues carefully. They're fragile. Comments (17)This is my first post on the cooking forum, though I've been a lurker. :-) These are not recipes but a few ideas that can easily be adjusted to lighter versions: Since baked apples were already suggested, pears poached in red wine could be an alternative (Bosc pears). Compote with fresh fruit in summer or dried fruit in winter. My favorite summer desert that is also low in calories is simply a fruit salad without any additives, just chopped seasonal fruit in rainbow colors. I let the mixed fruit sit in the fridge overnight to get lightly sweetened in their own natural juices. And a very quick and surprisingly delicious: 1 cup cooked quinoa sweetened with 1-2 Tb maple syrup. Nice in autumn....See More- 8 years ago
