Comments (14)Hmmm. Even The Princess, who is the pickiest eater in the world, will eat carrot cupcakes. She even knows there are carrots in there and she still eats them. She won't eat pineapple though, and so I have to leave the pineapple out of the carrot cake. Georgysmom is right, they'd rather have candy, so buy a bag of M&Ms or Hershey's and make the kids happy. No Snickers or Reeses, though, there's that pesky peanut thing going on. Actually, cookies and cupcakes get too beaten up on the trip to school, unless you're going to deliver them personally. The Princess likes to make her own "trail mix" with raisins and M&Ms and chocolate Cheerios, no nuts, package them into little snack bags and it's ready to go. If there isn't a peanut butter issue, she also really likes to take the rice krispie treats made with peanut butter with the chocolate topping, although we've managed to get away with making them with Cocoa Krispies and peanut butter and pressing a few M&Ms on the top and so there isn't the problem of melting chocolate if it's hot. Both the grandkids also like to take those rice krispie treats, make them into balls and roll them in sprinkles, or cut the treats into shapes with cookie cutters. Comments (15)We don't do any grilling in the winter but in summer, if someone's coming to dinner who I know is watching calories, I often make grilled fruit desserts: GRILLED STRAWBERRY SUNDAES 1/4 cup orange juice 1/4 cup strawberry spreadable fruit 1 tsp. cornstarch 2 pint strawberries, hulled 2 cups low-fat vanilla frozen yogurt Preheat the grill to a medium heat. In a medium saucepan, combine the orange juice, spreadable fruit, and cornstarch. Set aside. Thread the strawberries onto 4 skewers. Grill the kebabs, turning once, for 4 to 5 minutes. Meanwhile, place the medium saucepan directly on the grill or on the stovetop over medium heat and bring to a boil, stirring constantly. Cook, stirring, until the sauce is slightly thickened, about 1 minute. Remove the strawberries from the skewers and stir gently into the sauce mixture in the saucepan. Divide the yogurt among 4 bowls, spoon the strawberry sauce over, and serve. Notes: Can substitute ice cream for the frozen yogurt if desired. Sauce is best when serve hot. Can also be served over sliced angel food or pound cake. GRILLED PEARS WITH BUTTERSCOTCH SAUCE serves 4 4 large firm-ripe Anjou or Bartlett pears 3 Tbs. fresh lime juice 2 Tbs. sugar 1/3 cup evaporated milk (can be evaporated skim milk) 2 Tbs. firmly packed light brown sugar 2 tsp. butter (not margarine or spreads) 1/2 tsp. vanilla extract Peel the pears, halve lengthwise, and core. With a sharp knife, cut a very thin slice from the rounded side of each pear half so they will lie flat. In a bowl, toss the pear halves with the lime juice and sugar. Grill the pears over medium heat for 4 minutes. Turn them over, drizzle with any remaining lime mixture, and grill for 5 minutes, or until tender. Meanwhile, in a small saucepan, combine remaining ingredients. Cook directly on the grill or stovetop over medium heat, stirring constantly, until the mixture comes to a gentle boil. Cook until the sauce is smooth and slightly thickened, about 2 minutes. Divide the pears among 4 plates, drizzle with butterscotch sauce, and serve hot or warm. GRILLED STUFFED PEACHES (serves 4) 4 large peaches 2 Tbs. fresh lemon juice 1/3 cup quick-cooking oats 2 Tbs. firmly packed brown sugar (light brown, preferably) 1 Tbs. finely chopped almonds 1 Tbs. butter, melted 1/2 tsp. cinnamon In a large pot of boiling water, cook the peaches for 30 seconds to make them easier to peel. Immediately remove and rinse them under cold water and carefully remove their skins. Halve and pit the peaches and cut a very thin slice from the back of each peach half so it will lie flat on the grill. In a medium bowl, toss the peach halves with the lemon juice and set aside. Preheat grill to medium heat. Meanwhile, combine the remaining ingredients in a small bowl. Dividing evenly, fill the centers of the peach halves with the topping. Comments (24)If it isn't really humid, this is so, so good. It looks elegant and tastes just out of this world. I've not made it with Splenda. But if it's warm and humid it will pretty much ruin it. Google it and look at the pictures. So pretty! This is the recipe I used but there are tons if you Google. Have a great time with your family. PAVLOVA WITH BERRIES (Meg Kat blog) 4 egg whites 1 C sugar (or granulated Splenda) 2 tsp cornstarch 1 tso vanilla extract 1 tsp white vinegar Whipped cream - Berries macerated in a little sugar Preheat oven to 300 F and line a cookie sheet with parchment paper. I like to use an 8 or 9" cake pan and pencil to trace a simple round outline as a guide for pouring the meringue. (Turn paper over so the pencil is on the bottom of the pan.) In a large (and very clean) mixing bowl, whip egg whites until you have firm peaks. Slowly add the sugar while continuing to beat until stiff peaks form. Now mix in the cornstarch, vanilla, and vinegar. Pour mixture into the center of the circle and gently spread with a spatula until 2 or 3" short of reaching the line (it will spread out more while baking). Make an indention in the middle to hold the whipped cream and berries. Bake for 1 hour in a preheated oven then turn off the heat and leave in the oven until it has cooled. Top with whipped cream and top with strawberries and/or blueberries. (I macerate the berries, but use a slotted spoon to place them on top. (You don't want the juice.) You can leave the meringue in the oven over night to dry out. I would whip the cream when you get there and fix the berries, too. Just pack the meringues carefully. They're fragile. Comments (53)Yes, "healthy" is indeed ambiguous! it's like trying to find a "good" energy bar ... well do you care about protein, or carbs, or calories or fiber or banning sugar at all costs? Do you want organic or at least "natural"? etc etc We put our Cooking Club schedule together every August. January is always "lighter." Originally it was supposed to be "Whole 30" night but when we looked into that, it was too limiting. So we decided on "healthy" , which we defined to mean as low in calories as possible, without using artificial ingredients. Funnily enough, I am going to be at a cooking class at Bouley in NYC on Thursday during the day, then have the club dinner at night. So now I realize i need to make this in advance. I have decided on the item below. I can make it all in advance (I will also make the labneh), it is unusual and very pretty, and not only lower in calories but also offers the health-promoting benefits of pomegranate, yogurt, nuts and honey. On top of it all, I am picking up some honeycomb (rather than just honey) to put on top. Only negative is that it is cold, but, well, we aren't eating outside. : ) Lastly it will be a big turnout which means we will have a lot of food; I will want to nicely present small servings. I have a whole bunch of small glass votive holders and I will use those.
