If you've never been in a room that was badly proportioned due to too-high ceilings, you may not really believe there is such a thing. But there is, and it feels awful. Just very wrong -- but hard to put your finger on why. As a general rule, 9' is safe and comfortable for just about any room size. Higher ceilings can be are nice in large rooms; and 8' ceilings are wonderful for cozier spaces. One trick we've learned in this house is that a small area with lower ceilings at the entry to a larger space really 'opens up' the room with 8' ceilings. Our downstairs hallway has 7'6" ceilings, which we thought was a problem until we lived there a while. But now the 8' ceilings in the kitchen and den at either end feel much nicer, and the 'transition spaces' really function as transitions.

I'm sitting in a great room with a 14' ceiling, and it feels wonderful. That same ceiling height in the kitchen feels cold. The difference is that the great room has interior details (beams, ceiling fans, cabinets) that reference to 8' and 9', so the room has some human scale. The kitchen just has a white ceiling and the cabinets reach up to 10'. I always want/need higher ceilings, and interior details which vary in scale. I'd cut costs in the floor plan...6K sf. is a lot of money to heat and cool. You don't even want to know what your housekeeper will charge to clean (try 2-4 people all day) and it's too large to clean yourself. Unless you plan to scuff everywhere in "dusting slippers" your dust bunnies will be big enough to rope and ride. I realize that you probably really need that much space; we run 3 businesses out of our house. You might have 22 grand kids. Think "bunk rooms", shared spaces, flex spaces. We build up, into lofts, and let the agile kiddies climb the ladders. They think it's great fun. They like "dusting slippers" too.

If you like the look of the proportions of your current windows, but think they would look better a few inches taller, than add a foot+few inches to your new 10 ft ceilings. I'm sure there are some rough guidelines, but a lot comes down to preference and house design. Technology also comes into play, such as much larger doors and windows being used in hurricane areas due to newer window glass that is designed for the higher wind speeds. Some people don't like windows close to the ground and some do. Custom homes tend to have more and bigger windows than tract homes or spec builds. Do you want furniture in front of some windows? Adjust the sill height accordingly for those windows. Also consider the look from outside the house.

cpartist give excellent suggestions for how to deal with 10 foot tall kitchens, keeping the ambiance Craftsman and attractive. I will note I find 9 foot tall ceilings plenty fine for me, but go with feels comfortable to you. Although I do have a cathedral ceiling in the public part of the house.... (No, my house is not Craftsman). As someone else noted, you'll have to change your door heights and other aspects of your home to go with the increase in ceiling height - and that's not going to be cheap. Even at six foot one, I don't feel cramped in homes that have 8 foot ceilings - I was just in one (probably built in the 60s or 70s) this past Sunday (after months of not being to get out and visit folk very often at all). It was fine. But 9 doesn't affect pricing as much as 10 feet would. Please don't do without upper cabinets. You'll hurt resale, as not everyone is going to want to stop everything and remodel as soon as they move in. Even though I mostly have drawers, the lowest one is always a pain to access anyway..
