Driving myself crazy trying to pick backsplash. Please help!

So I am an engineer - and struggle to visualize something with just 1 small "sample" tile. I also tend to overthink everything! We are basically doing a whole house remodel. So far I have been beyond happy with all of my choices and decisions. But for some reason this final decision is overwhelming me!

What is making this so hard for me is I honestly absolutely love the tile from
Artisan by Stone Impressions. https://www.stoneimpressions.com (One of the pictures below I printed out the tile and taped it together to try to get a feel for how it would look)

But that tile is patterned and just to busy. I want the focus on the island
granite.

And I tend to just not like the subway tile look. Though
if I did subway I like the Ann Sacks Anna beveled rice paper doing small square and
rectangle mix.

I think the Ann Sacks segmented hex whitecap Irid will look the best and be unique - it just seems so
pricey for something so simple.

I have attached a few pics here for you to see. My kitchen is a MESS!!! But
try to look past all that. What you can’t see in pics due to the mess is
the granite is back lit. If you look where the backsplash will be there
are several different options. Some are tiles I was just using to try to
visualize.

I would really appreciate any thoughts or ideas!!!!
