Comments (14)The recipe at the link is the way it's done in Louisiana. I grew up on those yummy things; they are best in the spring. If someone would force me to choose between lobster and crawfish, I'd unhesitatingly choose crawfish. The point is, get your very well seasoned water boiling, and boil for a while before adding the crawfish so the flavorings can blend. You don't want to overcook the crawfish, 5 or 10 minutes is fine. Now, peeling them is an art. Here are directions for a right handed person: grab the crawfish tail in your right hand with the crawfish facing to the left. Grab the body with your left hand and twist in opposite directions, and the tail will come off. Still holding the tail with your right hand, peel off the first two or three sections of the tail shell. You now have exposed a bit of the tail meat. Grab that tail meat with the index finger and thumb of your left hand, and gently pull while pinching the other end of the tail meat through the shell, near the flippers. If you're lucky, the meat will come out in one piece. Devein it (that's a euphemism, it's intestine that runs along the top) if necessary (an empty 'vein' is edible), and pop it into your mouth. Hardcore crawfish eaters will, of course, suck the heads. There's a tiny bit of fat and liver inside the head which has soaked up a lot of seasonings. (In case it isn't clear, you suck on the part that you just separated the tail from, not the side of the head that has eyes and antennas.) Using a lobster analogy, you're getting the tomalley out of the critter. Hence the phrase seen on bumper stickers and T-shirts: "Suck da heads and squeeze da tips." Comments (99)Lori you certainly keep busy baking and it all looks lovely. We've been out a lot this past week but I've been cooking fish, salads, chicken and vegetables at home. Here's some of what we've had, all together. But yesterday Wolf and I went to the tennis and sports club to have a lunch with my friend Anne, who leaves for England today, and Lynne who had just come back from volunteering at the cat refuge, where she helps out every Saturday with abandoned animals. The restaurant at the club is just wonderful and for a small price of ten Euros (not much more than ten dollars) we get a three course meal, including a drink, bread and butter. And sitting outside on the balcony over the courts, it was so sunny and warm we kept moving the overhead parasol to keep us out of the sun. We all chose their cream of squash soup, some with cream, mine without and the three of them had a delicious breaded pork escalope with rice and creamed mushrooms. I had a curried chicken and vegetable dish. Dessert for Wolf and Anne was homemade apple strudel while Lynne had ice cream with chocolate sauce. It was a wonderful lunch, finished off with strong cafes cortado. It was a nice sendoff for Anne. Comments (110)Annie, I’m sorry you didn’t enjoy your venison burritos. Restricted diets can be so hard. DH has been told by his doc he needs to lay off carbs and cut his quantities back (hard for him to do with fast/takeout food). He’s been doing modestly well since but is always hungry now. A minimum of 2+ months to go before I can get him back on track with healthier home cooking. I made rye a few times and called it quits (brick dense, hard, taste was off). Yours is perfection. And it’s sourdough. Heavens. While the platter looks wonderful (capers, fresh cracked pepper, salmon… oh my), I’m fixated on the bread. Hopefully, someday, I can tackle sourdough… and I’d love to try sourdough rye! I’m hoping you’ll guide me as I flounder! Uhm… I found a recipe on a blog I love, but the sourdough uses spring water. May filtered water be used instead? If not, is the spring water bottled? Comments (17)Chunky Crawfish Spread 1 16 oz package frozen cooked crawfish tails (I have used 2 12oz) 1 8oz pkg cream cheese softened 1 medium green bell pepper, finely chopped 1 medium red bell pepper, finely chopped 1 to 2 stalks celery, finely chopped 1 small onion, finely chopped 6 garlic cloves, minced 1/2 to 1 teaspoon Creole or Cajun seasoning (one without salt) 1/2 teaspoon salt 6 to 12 drops hot sauce, to taste Chop crawfish, pat dry. In small mixing bowl, beat cream cheese. Add rest of ingredients, then stir in crawfish. Cover and refrigerate for 2 hours. (even better the next day) Serve with assorted crackers.
