Lemongrass can be frozen. Crush as you would before using fresh (bash with the side of a knife to soften the fibres), then chop, then freeze. From time to time while it is freezing, take the container out of the freezer and stir the contents around to separate them. Continue this process until fully frozen.

It will last a few days in the fridge wrapped or covered well. Cut it in half and freeze it. It's not ideal since it's frosted, but I freeze costco cakes..so why not...I actually like frozen frosting. LOL

I freeze twice baked potatoes which has sour cream and cheddar cheese. I also have frozen home made refried beans and both freeze beautifully. I was concerned about the guacamole but I checked and you can freeze avocados. I think I might be a little concerned about the texture though. If you and hubby are going to enjoy it now, why not take a small portion and freeze it just for future knowledge. I would be interested in how it fares.
