Whey in Breadmaking

Yesterday I was in the mood for experimentation. I had some whey left over from making Greek yogurt and was getting ready to toss it down the drain. But instead I decided to find a recipe and make some bread with it.

I made a Boule using my sourdough starter and whey and it actually came out really good. I did not use any yeast which was a first for me. It came out with a very crispy bottom and top which I have never been able to achieve before. I don't know if it had anything to do with the whey, but I will be repeating this experiment real soon.
