Comments (2)Marinated Zucchini Strips (source: The Everything Raw Food Recipe Book" by Mike Snyder with Nancy Faass, MSW, MPH, and Lorena Novak Bull, RD) Serves 4 4 medium zucchini 6 T. olive oil 1 T. lemon juice 2 teaspoons salt 2 cloves garlic 1/8 t. cayenne pepper 2 T. fresh rosemary Slice the zucchini into small, thin strips using a knife or mandoline slicer. In a blender, process the olive oil, lemon juice, salt, garlic, cayenne pepper, and rosemary together into a sauce. Dip each zucchini strip into the sauce and lay in flat on a dehydrator tray with a nonstick sheet. Dehydrate at 145-degrees F for 1-hour. Turn down the temperature to 115-degrees F and continue dehydrating for 2 hours, until the zucchini is pliable. Per serving - Calories: 206, Fat: 21 g., Protein: 2 g., Sodium: 1,176 mg., Fiber: 2 g. Fresh Zucchini Salad (source: The Low\-Carb CookwoRX Cookbook \- Eades) Serves 4 4 xmall zucchini 1 T. white wine vinegar 1/2 t. coarse salt 1/4 t. freshly ground black pepper 1/2 t. freshly minced basil leaves 2 T. olive oil 1 oz. Parmigiano Reggiano Wash, pat dry, stem, and slice the zucchini into thin rounds. In a small bowl, combine the vinegar, salt, pepper, and basil and allow it to sit for a few minutes. Whisk in the oil to make a vinaigrette. Pour the vinaigrette over the zucchini rounds and toss to coat evenly. With wire whisk, beat until smooth and sugar is dissolved. Pour mixture over slightly steamed and cooled asparagus spears, or sliced fresh tomatoes, cucumbers, zucchini chunks or spears. Comments (18)Loved your story, heaven! I'm sure your guys got a huge kick out of that. :) Here's a good basic marinade that you can fiddle with in a lot of different ways. STEAK MARINADE 1 T. oil 1 T. worcestershire sauce 1 T. soy sauce 1 T. balsamic vinegar (or you can change it up by using different types) 1 tsp. mustard (yellow, dijon, whatever you prefer) minced garlic (I add 1 clove, but we're not garlic fiends) salt, to taste (we think it's plenty salty enough because of the soy sauce so I don't add extra) freshly-ground black pepper, to taste If you're rushed for time or just feeling lazy, you can substitute a commercial garlic pepper blend for the fresh garlic and pepper. Or, as someone else mentioned, use the Montreal Steak Seasoning. Very good stuff. About cooking in the marinade... Most of them aren't suitable for that and are meant to be discarded once you're ready to pan-fry or broil the meat. Somebody correct me if I'm wrong about this, but unless there are specific instructions in the recipe to baste with the marinade as it cooks or for making a sauce of it, you need to pour it down the drain instead of into the skillet. :) sm...See MoreLOOKING for: Marinade for flank steak
Comments (9)Both Nancy's Backwood Flank Steak and Bubbe's Marinated Flank Steak (both ladies are regular posters on the Cooking Forum) are great recipes, really great recipes! Backwoods Flank Steak- Nancy (aka Wizrdnm) 3/4 C soy sauce 1/3 C Pickapeppa Sauce (a mild hot sauce) 1/3 C worcestershire sauce 1/4 C red wine 1/4 C red wine vinegar 1 1/2 Tbsp sesame oil 2 cloves of garlic, crushed 2 flank steaks (about 2 1/2 lbs total) Combine the marinade ingredients in a container large enough to hold the steaks. Add the steakes and refrigerate 6 to 24 hrs... Nancy Marinated Flank Steak (Renee aka Bubbe) Source: My own recipe since the late 1970Âs. Ingredients: 2 Â3 Lb. Flank steak For Marinade: 1/3 cup vegetable oil 1/2 cup tomato juice 1/2 cup light soy sauce 1/4 cup brown sugar 3 cloves garlic minced 1/2 tsp. freshly ground black pepper 2 scallions, sliced (optional) Preparation:  In a large bowl, whisk first 4 ingredients together.  Add remaining ingredients and stir.  Have butcher trim flank steak of all excess fat and silverskin.  Pound steak slightly on both sides, and with a sharp knife score surface shallowly on the diagonal in one direction and then in the opposite direction, creating a diamond pattern on both side.  Place in marinade and turn every so often to marinate evenly.  Refrigerate overnight if possible. Alternatively, marinate at room temperature for two hours and cook or refrigerate until ready to cook. To cook:  Remove from refrigerator one hour before cooking, drain and blot off excess marinade  Drain and discard marinade  Grill on barbecue or cook under broiler about 4 1/2 to 6 minutes on each side (depending on thickness) for medium rare. Do not overcook.  Let stand 2-3 minutes before slicing across the grain at a slanted angle. Comments (8)This is far from a traditional fajita, but it's quick and easy and we like it. Depending on the amount of chicken you use, mix BBQ sauce with honey and a squirt of lemon juice. I use a little less honey than BBQ sauce. So, if I am using 3/4 of a cup of BBQ, I'd use more than a half but less than 3/4 cup of honey. I don't measure the lemon juice but I'd guess around one tablespoon. Stir it all up, put in the boneless, skinless chicken breasts and grill. Just shred the meat or cut it in strips, and put it in a tortilla with all the fixings you prefer. I use Picante Sauce for the Mexican flavor.
