Sue ASIAN MARINATED CHICKEN BREASTS 5 LBS boneless skinless chicken breasts Marinade: 1 C veg. oil ¼ C sesame oil ¾ C soy sauce 1/3 C minced garlic ¼ C minced ginger 2/3 C minced cilantro 5-6 green onions, thinly sliced 1 tsp Black Pepper Combine marinade in a container large enough to hold the chicken. Refrigerate 4+ hours. Overnight is fine. Remove chicken from marinade and grill over med. hot fire. Done when thermometer registers 160°. Note: If only a small quantity of chicken is needed, you can divide chicken and marinade into freezer bags and freeze until needed. Chicken will be ready to cook as soon as thawed. Leftover cooked chicken makes a great sandwich either cold or reheated in the microwave. I like it heated with provolone, sliced chicken, tomato, lettuce and mayo. Also makes a great Asian Salad. Chop the chicken, lay over greens, sprinkle with mandarin oranges, roasted sunflower kernels, rice noodles and a sweet sour dressing.

Hi Cindy, how about BBQ on it he grill? I wrap them in foil and cook for about 30 minutes then take them out of the foil slather with BBQ sauce and finish the cooking process! Or, here is a Chicken and Biscuit Recipe, it looks more involved than it really is, I use Pillsbury bicuits, they are lighter and easier: Chicken Stew with Biscuits 3 whole (6 split) chicken breasts, bone in, skin on 3 tablespoons olive oil Kosher salt and freshly ground black pepper 5 cups chicken stock, preferably homemade 2 chicken bouillon cubes 12 tablespoons (1 1/2 sticks) unsalted butter 2 cups chopped yellow onions (2 onions) 3/4 cup flour 1/4 cup heavy cream 2 cups medium-diced carrots (4 carrots), blanched for 2 minutes 1 10-ounce package frozen peas (2 cups) 1 1/2 cups frozen small whole onions 1/2 cup minced fresh parsley For the biscuits: 2 cups flour 1 tablespoon baking powder 1 teaspoon kosher salt 1 teaspoon sugar 1/4 pound (1 stick) cold unsalted butter, diced 3/4 cup half-and-half 1/2 cup chopped fresh parsley 1 egg mixed with 1 tablespoon water, for egg wash Preheat the oven to 375 degrees F. Place the chicken breasts on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken. In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and the heavy cream. Add the cubed chicken, carrots, peas, onions, and parsley. Mix well. Place the stew in a 10 x 13 x 2-inch oval or rectangular baking dish. Place the baking dish on a sheet pan lined with parchment or wax paper. Bake for 15 minutes. Meanwhile, make the biscuits. Combine the flour, baking powder, salt, and sugar in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is the size of peas. Add the half-and-half and combine on low speed. Mix in the parsley. Dump the dough out on a well-floured board and, with a rolling pin, roll out to 3/8-inch thick. Cut out twelve circles with a 2 1/2-inch round cutter. Remove the stew from the oven and arrange the biscuits on top of the filling. Brush them with egg wash, and return the dish to the oven. Bake for another 20 to 30 minutes, until the biscuits are brown and the stew is bubbly. Note: To make in advance, refrigerate the chicken stew and biscuits separately. I tend to do mine simply like Ginger...I'm usually in a hurry but, they taste good! 2 chicken breast halves; cut into thin strips Salt & pepper 1/8 teaspoon cayenne pepper (optional) 1 teaspoon fresh grated ginger 1 medium onion; sliced 2-inch pieces 1 medium red or yellow bell pepper; sliced 1 large carrot julienne cut 1 cup cut asparagus or broccoli 3 tablespoon canola oil 1/2 cup chicken broth 2 tablespoons light soy sauce 1 tablespoon cornstarch 2 red or green onions (scallions); sliced 2 tablespoons toasted peanuts (or cashews) Garnish with chopped parsley (optional) 2 cups cooked rice or rice stick noodles Slice chicken into bite-size pieces; season with salt, cayenne and ginger; refrigerate until ready to use. Clean and cut all vegetables and grate ginger. Stir together broth, soy sauce and cornstarch and set aside. This will be quick so begin cooking 5 to 10 minutes before serving. Heat a wok or a large skillet over medium-high heat; add oil and stir the ginger into the chicken and stir-fry for 2 to 3 minutes until done. Remove the chicken and add onion, bell pepper, carrot and asparagus for 2 or 3 minutes until tender-crisp. Add the chicken back to the pan along with the stock mixture and continue until sauce thickens. Sprinkle with sliced onions and toasted nuts along with chopped parsley. Teri, almost everything I make includes chicken and white wine, LOL. I hope you resolve the question about the white wine, such as.....is it "cooking wine" which means (basically) throw it down the drain. If its one of those "cooking wines" that came from the supermarket, it means that it's full of salt and other stuff that you really should not be interested in. What Ann said is very simple and true - if you can't drink it, then don't cook with it. That said, I've had some white wine in my fridge for several weeks. We don't drink it but we do cook with it. I would not serve it in a glass but I do use it in a recipe. I don't honestly know how to draw the line - cooking/drinking - but we're happy with the finished recipe that uses the white wine. I always sniff it out and have not ever thought that it smelled moldy or sour or anything. Here's a favorite recipe and I usually double the sauce. CHICKEN PICCATA 4 Chicken breast halves, boned and skinned Salt and Pepper Flour (enough for coating) 3 tablespoons butter Juice of 1 lemon 1-1/2 cups chicken broth 1/2 cup white wine Put a piece of waxed paper on the counter and place chicken on top. Use a meat pounder, the side of a saucer, the unsharpened side of a heavy knife or other object to pound the breast into a thin piece thatÂs uniformly thick (about an inch). Salt and pepper the chicken generously, then coat with flour. Melt butter in a large skillet and brown chicken on both sides. Remove chicken from skillet. Add lemon juice, chicken broth and wine. Boil down until itÂs about one-half cup. Place chicken back in skillet, cover and cook 3 minutes. Remove cover and serve.
