Speculaas

3 cups flour

4 tsp baking powder

1 tablesp cinnamon

1 tsp ground cloves

1 tsp ground nutmeg

½ tsp ground aniseed

½ tsp ground ginger

250g/8 oz butter

1 ½ cups brown sugar

3 tablesp brandy

egg white for glazing

Sift together dry ingredients. Cream the butter with the brown sugar until very pale and fluffy.
Stir in the brandy and dry ingredients.
Knead dough well, it will change colour and get darker and firmer. Dough should be fairly stiff to take impressions if you're using a speculaas mold. Roll out about 5mm thick and stamp with molds or cut with a cookie cutter. Brush with egg white and bake on a lightly greased tray at 190C/375F for 12 minutes.

Notes: To be honest, I don't see why you couldn't roll this into a cylinder and slice it to bake slices.

They are called "Speculaas" because the Latin word for "mirror" is "speculum". As the mold makes a mirror image on the dough, the cookies were called "Speculaas". :-)
