I had my main meal a bit earlier, nothing more for me this evening. I had mac and cheese with broccoli and then some praline pecan ice cream. All good. How about the rest of you, did you have your main meal yet?

I love mac n cheese and broccoli. I am just about to start dinner. I am preparing a recipe for spare ribs that my mother used to make that came from my great aunt. It. calls for sliced onion and lemons, ketchup, seasoned with chili powder, garlic salt, worcestershire sauce. It was a favorite of mine growing up. I am looking forward to dinner tonight.

We're having a roast beef hash with lots of mushrooms and potatoes stuffed into red bell peppers and baked with mushroom sauce. Possibly an odd dish, but I had the peppers, a few slices of beef, and lots and lots of mushrooms to use up before shopping day tomorrow. Some meals just work out that way - plans changed earlier in the week, and the mushroom soup didn't happen.

I had left over Cobb salad from lunch today. We couldn't play golf today because of the weather so eight of us met for lunch. It was a friends birthday so I baked some carrot cake muffins and brought them for a treat. Nice to have leftovers ready for dinner tonight because I'm leaving shortly to go play Mexican train.

I made some salmon cakes and a big, colorful salad. Robert had his on a crunchy bun; I put mine on the salad. I tried a new Louisiana style remoulade sauce which turned out so great! I make my patties with canned salmon, finely chopped onion, celery, and green pepper, an egg, a couple of tablespoons of mayo, same of panko, and one tablespoon of coarse corn meal. It's a gloppy mess before being cooked but soon turns into a perfect patty with a browned, crunchy crust. I'll be having leftovers with a poached egg for brunch, can't wait.

I started with the idea of chicken-something. I saw plain yogurt and thought Tandoori Chicken, but found I was out of tandoori paste, but found a jar of Moroccan habibi sauce, and forged on with a plan to make Habibi Chicken. For a side then obvious choice would then be Couscous with vegetables, but I found I was out of couscous as well, but I had pearled barley left from a Blue Apron recipe I didn't make, so I cooked that, added cooked red pepper, zucchini, and mushrooms in a butter and lemon sauce. For being a total improv, it turned out pretty good.

I made rice w/ cheese sauce & spicy pork ribs in the slow cooker. This new digital crock pot is da bomb! The display is lighted. The crock pot exterior is stainless steel. Easier to clean than my old painted one. So user friendly I didn't read the manual & dinner is done!

We ate at Lubys this afternoon. I had a chicken fried chicken cutlet with sweet potatoes and sautéed mushrooms.

Mexican train day and I made Tuscan bean soup for us gals. Plus one brought warm cornbread to go with it. Yummy!

After weeks of being stuck in the house, I got out to the mall for a little shopping this afternoon. Made a big salad before going to go with the pizza we will have for supper. Digiorno Thin Crust of course.

Pizza just now came out of the oven. I hope the crust is okay -- the dough felt dry and didn't do well on "the windowpane test."

Calzones. I found some frozen pizza dough at the grocery store a few weeks ago and tonight is the test run. Usually I make my own but I thought I would give this a try.

Rigitoni with meat sauce, garden salad, long crusty french log, real butter (always). I put some apples in the oven with butter, cinnamon, and brown sugar right before dinner so that was dessert.

The kids have been asking for french toast so tomorrows dinner/supper will be french toast, bacon, and a small fruit salad. Tim doesn't eat french toast or bacon so I'll surprise him with a veggie and cheese omelet.

I have been enjoying cooking in my Instant Pot since last week but tonight (10 pm) I am going to have lime Tostitos with cheese melted under the broiler with salsa and a cheesy corn dip. I won't be going to bed until 4:00 am

Wanted to try out my new electric frying pan, so BFD tonight: sausage links, fried taters with onions, scrambled eggs, and biscuits. Love my new skillet. Our old one was at least 20 years, and bought from a thrift shop!
