Since I made the comment about concavity, I feel like I should respond to your question. However, while I have been accumulating induction-capable cookware for use with a future induction installation, I have so far used this cookware only with gas, and with a smoothtop electric. On the smoothtop, I have never even observed any concavity with my Demeyere cookware. If it's there (and Demeyere says it is), it's extremely slight. The cooking is extremely even--simmering occurs uniformly across the the entire pan. I note that Demeyere states that this concavity is present only when cold, and that it flattens as the pan is heated. Most of Demeyere's Atlantis pans have a 2mm copper disk in the bottom that goes from edge-to-edge of the pan. They are extremely effective in evenly spreading the heat. There are no hot spots or cold spots. As an engineer, I would expect that concavity, even substantial concavity, would not have any effect on heating on an induction cooktop. The heating comes from a magnetic field that extends a certain distance above the burner; no actual contact with the burner surface is required for it to work. (For example, some folks here have shared how they put paper towels or Silpat pads under their pans to eliminate cleanup; these don't effect the ability of the burner to heat the pan.)

Maybe its just electrolux but I would never purchase an induction cooktop again. Who ever heard of a maximum pan size? Add that to not being able to cook on high on the two largest burners (8.5" oh boy) at the same time and you are very limited. I learned the hard way when using my large (10") dutch oven for stew and then boiled noodles. POP went the cooktop. The first thing the repairman said is "were you using a big pan?" I cook a lot. I have a 13" saute, the usual collection of LeCruset, Clam steamer and stock pots. Not to mention how are you expected to take your roast pan and deglaze it? Just cooking for a family of four is a real challenge on this. I was going to just eat the $1700 and get a gas cooktop but the minimum cutout for this unit in the granite is just a hair larger than the maximum allowed for a gas range. I'm stuck with this. I was able to crank out more food with my $275 four burner electric coil. Too many shills posting rave reviews without telling people what the limitations are. The 30" cooktop with 8" elements is only great when its dinner for 2. Just get gas and you don't have to deal with this nonsense.

The problem isn't your pan--it's how you're using it. This video link has been floating around various GW Forums for quite some time now. It shows in great detail the proper way to heat a pan so that stuff won't stick. I'm not a great wokker, but I've been pleased with my Le Creuset wok on the induction. I like that it has a round interior bottom, but because of the small footprint it doesn't take advantage of the high wattage of the biggest element. It is heavy. The shape makes it easier to move around than some cast iron, but it's still big and heavy. It also takes a long time to get really hot because the heat has to spread up the sides. Once it's hot, however, it doesn't cool down fast when you put stuff in it, the way a carbon steel wok does, so it recovers heat pretty well, in my estimation. There's no one handed flinging with it, however.

I bridge two hobs for griddles. I have not cooked with a large non griddle pan on the 4 hobs bridged together. I did put my very large griddle over the 4 hobs bridged together and after it heated for a while (it is carbon steel) it worked fine for pancakes. You will get a “dead” area in the middle of the 4 so how well it cooks will depend on your cookware (how it conducts the heat) and what you are cooking. Someone posted a photo of what the wolf hobs look like under the hood and they were not circular but octagonal if I recall correctly so the dead areas are minimized. If you can get to a wolf showroom or other design center that has wolf I would try it out. Were you considering the Thermador Freedom? It says max cookware size 13X21. I would think it could accommodate two 12” pans - again find a showroom that has one live and try it out.
