Travel spices

Going from New England to the south with various rentals from January through early March. We've done this in Europe but not in the States before but can't put our epileptic Australian Shepherd in a crate in the belly of a plane.

I'm somewhat being frugal but also have taste aversions (particularly for smokey bacony, chipotle, smoked paprika kind of foods). Have never rented in the States. In Europe it was hit or miss in our rentals if you had salt, pepper, olive oil, or spices. We're definitely taking a few good knives. I'm trying to put together a spice kit from what I have in my cabinets. We're not driving an 18 wheeler and our Honda CRV has to accommodate our Aussie and our luggage. What would you consider essentials so as to have seasonings to complement local foodstuffs?
