Comments (32)Angelaid, I love potato pancakes but I would say that is is my favourite version. There is no secret to making these pancakes. I've made them with mashed potatoes that I made specifically for making these pancakes and I've also made extra mashed potatoes for dinner and saved the leftovers for these pancakes. When I make them with the leftover mashed potatoes there is also butter in the mix. This is not a stiff or thick batter. I use a 1/4 cup measuring cup to scoop up the batter. Mere Blanc's Potato Pancakes From:www.thedailyspud.com with very minor changes. 2 small baking potatoes 1/4 cup milk 1/3 cup All-Purpose flour 2 eggs, separated 1-1/2 tablespoons heavy cream Pinch of salt Pepper Fresh chives (or green onions) Butter for frying Cook potatoes until tender Mash with a little milk. Let potatoes cool before adding the remaining milk, cream, flour, egg yolks, salt, pepper and chives. Beat Egg Whites until stiff. Fold into potato mixture. Do not over mix. This is a light but thick batter. Heat a griddle or skillet. ( I used a rectangle electric frying pan) . Brush with butter. Using a 1/4 cup measuring cup drop batter on to griddle. Cook until pancakes are brown and then flip. Serve with sour cream. Here is a link that might be useful: Potato Pancakes...See MoreNew Years' Eve menu - What's yours?
Comments (35)Terri, I love sparkling grape juice and we always have it at family dinners but I did not think to get some for tonight. Ann, I just happened to catch the Barefoot Contessa last week and she made the Green Goddess dressing. It just sounded so good to me...well anything with a c. of fresh basil suits me just fine! This is a very refreshing and just plain GOOD salad dressing. Basil Green Goddess Dressing 1 cup good mayonnaise 1 cup chopped scallions, white and green parts (6 to 7 scallions) 1 cup chopped fresh basil leaves 1/4 cup freshly squeezed lemon juice (2 lemons and see My Note) 2 teaspoons chopped garlic (2 cloves) 2 teaspoons anchovy paste 2 teaspoons kosher salt (see note) 1 teaspoon freshly ground black pepper 1 cup sour cream Salad: 3 heads Bibb lettuce 2 to 3 tomatoes Place the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste, salt and pepper in a blender and blend until smooth. Add the sour cream and process just until blended. (If not using immediately, refrigerate the dressing until ready to serve.) Cut each head of lettuce into quarters, remove some of the cores, and arrange on 6 salad plates. Cut the tomatoes into wedges and add to the plates. Pour on the dressing and serve. NOTES: I did not add any salt to this recipe due to the anchovy paste. Also, I got a 1/4 c. juice from just half a lemon and a small lemon at that! Comments (26)We'll go out for an early dinner of Mexican food, maybe with friends (and with or without their children), maybe not. New Years Day I cook prime rib for just the two of us...tradition these days. I never again plan to sit around New Years Day sleepless, with a headache from the night before trying to be interested in football, have outgrown that for good :) For many consecutive years we went to the same party at the same club. Finger foods only, lots of alcohol and a band....while we aren't the types to sit on differences and peeves to let them out (publicly) all at once, it was surprising how often friends did just that, and New Years Eve got so it could almost be counted on to be 'fight night' with one couple or another. No thanks, no drama, no more :)...See MoreDo You Have Plans for New Year's Eve?
Comments (26)We will head south on Wednesday. Probably come home on Sunday. Then again we may stay longer. We never know once we get there. I will take my sewing machine and do some sewing for the grandaughters for summer. Never to early to get started. Happy New Years to all. Stay safe in your travels... Susie...See More
