Microwave baked potato.
Comments (15)I also have never had a microwaved "baked" potato that I really care for, I've cooked them in the microwave and used them for American Fries, but that's pretty much it. i've started them in the microwave and finished in the oven, but it's still not optimal. As a result I bake potatoes in the oven when I'm making something else that requires the oven, I never just bake potatoes in there. However, I put potatoes on the rack of my little 6 quart Nesco roaster and bake them there and they are perfect for me. My 750 watt electric roaster will use (according to my electrician husband) less than 10 cents to bake those potatoes for an hour. I can toss a meatloaf in there with them if I wish but I usually just bake 4 or 5 potatoes and then use the extras for home fries the next day or so. Anyway, my gas oven will costs several times that. Plus, in the summertime I can have baked potatoes and not heat up the kitchen and I can even put the Nesco on the back porch if I wish. it's a great little appliance and makes great baked potatoes. Comments (7)Not sure what size roaster oven you have but you can make it right in the roaster if you have a 4, 5 or 6 quart oven or use a dish if you use the larger oven. A "Nesco" as many if not most of their owners lovingly call them is a roaster oven and will do anything an oven will do and more. As for adjusting time, I wouldn't plan much on it, however it might take a little adjustment for certain things since it's smaller than a conventional oven. I see no reason why that recipe shouldn't work just fine in a Nesco or any other brand of electric roaster oven. I've made the macaroni/beef hotdish in my 4 qt and 6 qt, the best lasagna I ever made came out of the 4 qt Nesco, and as I've shared several times I've baked bread, meatloaf, burgers, brats, chili, pot roast, ribs, soup, stew, etc, etc... again, if it can be done in a slow cooker or an oven, you can probably do it as well or better in a roaster oven....See MoreHow do I make corn on the cob in a Nesco roaster?
Comments (7)I've never done that, but I've made baked potatoes in the Nesco, as well as green beans with ham and various roasts from chicken to venison. I think I'd put the rack in the bottom, add some water, stack the corn on the rack and let it steam. How long depends on how you like your corn, I like mine just barely cooked. If you stack it really high you might have to rearrange so the ones in the middle are top/bottom. Good luck, I think it's a really good idea. Remember, the Nesco is really an oven, so if you can bake it in the oven, (400F for 30 minutes, BTW), you can bake it in the Nesco. I've also seen some recipes that call for steaming the corn while still in the husks. Cut off the tassels/tops, but leave enough husk to cover the ear of corn. Steam at 350F for 30 minutes, then let it cool slightly and husk it, or let everyone husk their own. Comments (32)Or just leave them in their foil until they turn the color of my toe and throw them out. :) The toe is healing nicely, thank-you, and car #1 has finally gone to the dealership. Car #2 is still being fixed. I did get to do a couple of errands after the tow, and now my other ankle is complaining about taking up the balance duties of the opposite pinky. I should cook, but I think I'm playing hooky tomorrow. ;) I was out eating a romaine-free salad tonight, but did filch some fries from my companion, who never finishes them anyway. They were way too salty, but really good. Better than usual. The too salty was probably the improvement. ;) 2Many, no apologies! That's hysterical. Well the potatoe is hysterical. The quip is smile-worthy. All good. I've often seen a hand of ginger, but that's the first foot of potato I've seen! Sherry, that rock sounds as immovable as the bathtub! "Restaurant size" potatoes is what they're called. though, as you say, many restaurants serve larger ones. Two pounds though? Wow. I can't imagine wanting to bring home an uneaten half of a potato the way I would half a chicken serving or half a sandwich. And here I thought one pound potatoes were huge!...See MoreLars
