Would tongue and groove walls and ceilings be considered structural?

Our 1916 home that we are restoring has floor to ceiling tongue and groove planks. We have already removed some of the planks on two walls that we want to remove eventually. We are going for a coastal farmhouse look so we wanted to also remove the tongue and groove planks from the ceilings to expose the joists. My father brought up an interesting thought in that these planks may actually serve a structural purpose which is something we had never considered.

Could this be a possibility and if so, could we still expose the joists or would it not be advisable? If they are, is there a way to reinforce said joists?
