Jasdip....they look delicious! The chocolate chip cookies lose every year. The judges are looking for "unusual". A bar cut to look like a cookie is sort of cheating....but it's got an edginess to it maybe....I'm giving it a try. rhizo......I'm comfortably retired from the computer industry. This is my "something to do job" & medical insurance. I work in a call center. It's monotonous, so they do "something" almost every week to "entertain" us. We have young people working there, but the majority are people who were layed off and ended up, not by choice, getting a job there, out of their comfort zone. Lots of people with college degrees. The company will even pay for your college degree while working there. Kayjones....Megan is a chef(culinary degree), owns her own catering business on the side. She suggested making those. Salted Peanut Bars (The flavor of a Pay Day candy bar.) 1 1/2 cups all purpose flour 2/3 cup firmly packed brown sugar 1/2 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon baking soda 1/4 + 1/4 cup butter, softened 1 teaspoon vanilla 2 egg yolks 3 cups miniature marshmallows 2/3 cup corn syrup 2 teaspoons vanilla 1 (10-oz.) pkg. ReeceÂs peanut butter chips 1 (16-oz.) can salted, dry roasted peanuts Heat oven to 350°. In large bowl, combine flour, brown sugar, baking powder, salt, baking soda, 1/2 cup softened butter, 1 teaspoon vanilla, and egg yolks until crumbly. Press firmly in bottom of ungreased 9X13X2-inch baking pan. Bake for 12 to 15 minutes or until lightly browned. Remove from oven and immediately sprinkle with marshmallows. Return to oven and bake an additional 1 or 2 minutes until marshmallows just begin to puff. Cool while preparing topping. In a large saucepan, combine corn syrup, 1/4 cup butter, vanilla and peanut butter chips. Over low heat melt just until chips are melted and mixture is smooth, stirring constantly. Remove from heat and stir in peanuts. Immediately spoon warm topping evenly over marshmallows; dipping your fingers in water to prevent stickiness, spread to cover. Comments (20)Ah, the lowly peanut. I remember reading a book in grammar school about genius George Washington Carver, who discovered hundreds of uses for peanuts. Then our president Jimmy Carter was a peanut farmer. I went to my local store today and bought one jar of Peter Pan roasted honey creamy peanut butter. For breakfast I dipped apple wedges in PB. Delicious! But the peanut butter did cost $2.99. It had been around two bucks. And I must end with a funny story about my late hoarder Mother, who bought 2 jars of peanut butter because it was on sale 2 jars for $5. Then she went to another store that had the same deal and got 2 more. What does a blind 87 year old woman with no teeth need with 4 jars of peanut butter?
