Gardenia help - replanted some root rot

HI everyone. I searched all over the internet. 2nd gardenia death in 2 year. This was an August Beauty. It was doing amazingly well for 4-5 months until I decided it needed a new pot... and put it in what in hindsight was too big a pot. in a few weeks it stopped drinking. It looked like it needed water BUT the soil was too wet.. SO. I took it apart, cleaned the roots - there were some whites (see below). I trimmed the brown roots off. Repotted back to the smaller original pot. Dramatically pruned it back to let the roots have energy. The plant is still not really drinking and leaves keep drying. Any further ideas? I might take it to the botanical gardens so maybe they can teach me about this.
