Looking for recipe for crisp, not-too-rich cookie

Well, that's it. I live in Italy, and recently got a bag of "ciambelline", doughnut-shaped crisp cookies with a mild flavor, not overly sweet. The ingredients list sounded quite benign. I don't make cookies because all the recipes I see are too rich in butter. I looked for recipes in Italian (and on here) for "ciambelline", and discovered that they include what we call doughnuts, as well as the light not-too-sweet crispy baked ones I have in mind. All ingredients are by weight, and I don't have scales, and none sounded quite right, so I thought I'd ask here. It doesn't have to be an Italian recipe, just a mild, crisp, not-too-rich cookie. I do make biscotti, by the way; what I have in mind is less toothbreakingly hard. No lard, please. Oil, if cookies can be made with oil, is very welcome. Thanks for suggestions.
