I usually start making cookie dough now and then freeze it until a few days before I bake when I remove it from the freezer and place it in the fridge to thaw. I wrap each dough in wax paper, then place it in a zip lock freezer bag. You can place more than one in a bag and label each dough. I've kept them frozen for several months before baking them and they turned out fine. I don't recommend that for special occasions, but for your own use they should be fine. I included a note in the recipe that I don't put in the freezer; they might be OK, we just haven't tried it with that particular cookie. Basically, butter-based cookie recipes do well in the freezer. Cranberry Lemon Cookies A wonderful cookie I discovered at Gail's Recipe Swap. It is now one of the "must have" cookies in our family at Christmas time. They freeze well, but you should thaw them before you frost them. * 1/2 C butter * 1/2 C sugar * 1/3 C brown sugar * 1/2 tsp. lemon zest * 1 egg * 2 tsp. vanilla * 1 C flour * 1 tsp. baking powder * 1/2 tsp. cinnamon * 1-1/2 C chopped pecans (I use walnuts) * 1-1/2 C chopped fresh cranberries Cream butter, sugars, and lemon zest. Beat in egg and vanilla. Combine flour, baking powder and cinnamon. Gradually beat into butter mixture. Stir in nuts and cranberries. Drop by teaspoonfuls 2 inches apart on greased baking sheets. Bake at 350F for 10 to 12 minutes, or until golden. Let cool slightly before removing to cooling racks. Frost when cool. ICING: Whisk together 1 C confectioner's sugar, 2 Tbsp milk, and 1/4 tsp. lemon zest. *********************************************** Walnut Acorn Cookies Hubby remembers his mom making these cookies when he was a kid in Ohio, and it remains as one of the "must have" Christmas cookies in his family. * 1 C melted butter * 3/4 C brown sugar, firmly packed * 1 C finely chopped walnuts (chop first, then measure 1 cup) * 1 tsp. vanilla * 2-3/4 C sifted all-purpose flour * 1/2 tsp. baking powder * 1 C (6 oz.) semi-sweet chocolate chips Stir together melted butter, brown sugar, 3/4 C walnuts and vanilla. Sift flour with baking powder and stir into butter mixture; blend well. [At this point, I let it cool then wrap it in waxed paper and then a freezer bag and keep in the fridge until ready to bake. Let come to room temperature before forming into cookies.] Shape cookies by pressing dough firmly into a teaspoon (not a measuring spoon), slightly mounding the dough to form the shape of an acorn. Be sure the dough is firmly formed on the spoon. Bake on ungreased cookie sheet in 375F oven about 13 minutes, until light golden brown. Cool. Meanwhile, melt chocolate over warm water in double boiler. Dip large end of cookie in melted chocolate, then in remaining walnuts. Cool on wax paper. Store in air-tight containers. Makes 4-5 dozen cookies. **************************************************** Mexican Wedding Cakes A tender, buttery cookie rolled in powdered sugar. * 1 C softened butter * 1/4 C confectioner's (powdered) sugar * 1/8 tsp. salt * 2 tsp. vanilla * 2 C sifted flour * 1 C chopped pecans or toasted almonds Cream butter and sugar until fluffy. Add salt, vanilla, flour and nuts; blend well. Shape into roll, 1-1/2" in diameter. Wrap in wax paper and chill. Slice in 1/4" slices and shape. Place on ungreased cookie sheet, bake in 400F oven 6-8 minutes for slices, 8-10 minutes for balls. The egg white is to make the nuts stick...dip them in sugar if you want....but they will be fine without... The sugar will stick better with the egg....but some will stick without the egg. Frankly, I wouoldn't dip them in either egg or sugar. Linda C

The recipe was submitted by Robin J. The cookies will puff up slightly. The recipe makes about 6 dozen cookies depending on the cookie cutter. Ingredients 1 cup butter or margarine 2 cups white sugar 3 eggs 2 teas vanilla 3 cups flour 1 teas baking powder 10 tbsp unsweetened cocoa powder Directions Cream butter and sugar until light and fluffy; add eggs, beating well. Mix in vanilla. Combine flour cocoa powder and baking powder, add to cream mixture. Mix well. Cover and chill for 2 hours. Preheat oven to 350 degrees. Divide dough in half. Roll out each half to ¼ inch thick. Cut with cookie cutters. Place on lightly greased cookie sheets. Decorate. Bake 10 to 12 minutes. Decorate. Cut-Out Chocolate Cookies Cookie Type: Cut-out This is another recipe out of HersheyÂs Best-Loved recipes. Good texture and taste. It makes about 3 dozen cookies depending on the size of your cookie cutters. Ingredients ½ cup (1 stick) butter or margarine, softened ¾ cup sugar 1 egg 1 teaspoon vanilla extract 1 ½ cups flour 1/3 cup unsweetened cocoa ½ teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt Directions: Beat butter, sugar, egg and vanilla in a large bowl until and fluffy. Combine flour, cocoa, baking powder, baking soda and salt; add to butter mixture, blending well. Chill dough about 1 hour or until firm enough to roll. Heat oven to 325 degrees F. On a lightly floured board or between 2 pieces of wax paper roll a small portion of the dough at a time to ¼ inch thickness. Cut into desired shapes with cookie cutters; place on an ungreased sheet. Bake 5 to 7 minutes or until no indentations remain when touched lightly. Cool slightly and remove from cookie sheet onto wire racks. Coo completely, decorate as desired. Hints, Tips, Tricks and How to Cheat: I found that the dough cracked when I tried to roll it out after chilling. The dough needs to be at room temperature. The cookies also needed a longer baking period 8-9 minutes. Also, I found that if you roll the dough on a silicone mat that is floured, then cut out the cookies, it makes it easier to get the cookies onto the baking sheet.

I can't possibly give you a "recipe" for chicken soup....but I can give you hints. Chicken soup is only as good as the broth. To make a great chicken stock, you need to do a long slow cooking of a variety of veggies, along with chicken pieces. I use about 4 pounds of wings, cover with about 4 quarts of canned chicken broth, add a large or 2 small onions cut up with the skins, about 6 or 7 stalks of celery, with the leaves, 5 or 6 big carrots, 2 or 3 parsnips a sweet potato, cut into 4ths with the skin, several stalks of parsley, a bay leaf or 2, a T or so of kosher salt ( no cornstarch in it)...a teaspoon of pepper corns......and simmer very slowly for about 5 or 6 hours..... Cool slightly and strain through cheese cloth.....discard solids and save the broth. Sautee a chopped onion in 2 T butter Add 1/4th of a red bell pepper And 2 stalks of celery diced And 2 carrots cut into small dice. Sautee slowly until the veggies are somewhat softened. Add 2 T. flour and stir into the btter....cook a minute and slowly add a quart of the chicken broth, whisking constantly. Cook until slightly thickened.....about 2 minutes after it comes to a simmer. Whisk 3T. cornstarch with a pint of light cream and slowly add to bubbling soup.....whisking.....and cook until it has simmered for 3 minutes. Taste, correct salt and pepper seasonings, add 1 1/2 cups cooked chicken ( I sautee boneless chicken breasts and dice) and 2 oz cream cheese......and garnish with a generous amount of chopped parsley.
