LOOKING for: chocolate cookie cutter cookie recipe

I am NOT a baker, but I had a recipe for chocolate star cookies and the recipe is just horrible. The dough kept cracking as i was trying to roll it out. Maybe I was doing something wrong, but on the epicurious site there were 3 bad reviews to these cookies, so I threw the dough out and want to start over!!!!

Please help. Also, how long should the dough stay out from the frigde before you start rolling the dough?

ere are two recipes that I like. Hope you have success with them!

Chocolate Cut Out Cookies

Cookie type: cut outs

This is another recipe from www.cookierecipe.com. The recipe was submitted by Robin J. The cookies will puff up slightly. The recipe makes about 6 dozen cookies depending on the cookie cutter.

Ingredients

1 cup butter or margarine
2 cups white sugar
3 eggs
2 teas vanilla
3 cups flour
1 teas baking powder
10 tbsp unsweetened cocoa powder

Directions

Cream butter and sugar until light and fluffy; add eggs, beating well. Mix in vanilla. Combine flour cocoa powder and baking powder, add to cream mixture. Mix well. Cover and chill for 2 hours.

Preheat oven to 350 degrees. Divide dough in half. Roll out each half to Â¼ inch thick. Cut with cookie cutters. Place on lightly greased cookie sheets. Decorate. Bake 10 to 12 minutes. Decorate.

Cut-Out Chocolate Cookies

Cookie Type: Cut-out

This is another recipe out of HersheyÂs Best-Loved recipes. Good texture and taste. It makes about 3 dozen cookies depending on the size of your cookie cutters.

Ingredients

Â½ cup (1 stick) butter or margarine, softened
Â¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 Â½ cups flour
1/3 cup unsweetened cocoa
Â½ teaspoon baking powder
Â½ teaspoon baking soda
Â¼ teaspoon salt

Directions:
Beat butter, sugar, egg and vanilla in a large bowl until and fluffy. Combine flour, cocoa, baking powder, baking soda and salt; add to butter mixture, blending well. Chill dough about 1 hour or until firm enough to roll.

Heat oven to 325 degrees F.

On a lightly floured board or between 2 pieces of wax paper roll a small portion of the dough at a time to Â¼ inch thickness. Cut into desired shapes with cookie cutters; place on an ungreased sheet.

Bake 5 to 7 minutes or until no indentations remain when touched lightly. Cool slightly and remove from cookie sheet onto wire racks. Coo completely, decorate as desired.

Hints, Tips, Tricks and How to Cheat: I found that the dough cracked when I tried to roll it out after chilling. The dough needs to be at room temperature. The cookies also needed a longer baking period 8-9 minutes. Also, I found that if you roll the dough on a silicone mat that is floured, then cut out the cookies, it makes it easier to get the cookies onto the baking sheet.

I think oreo cookies makes a cookie crumb that can be found in the baking section. I use to split them apart and just use the half of the cookie with the icing scraped off and eat the other half as a cookie. Waste not want not. Try the baking section where the graham cracker crumbs are. Dottie

I found this recipe that someone posted saying it was on the back of a bag of ghirardelli white chocolate chips. Maybe you can substitute the double chocolate chips for the white. "This recipe was in the cookbook which came in a Ghirardelli gift basket. I believe itÂs also on the back of their white chips. Not being a huge fan of white chips, I just used chocolate. These are really good. TheyÂre not at all chewy, but I wouldnÂt call them cakey either. TheyÂre tender, bordering on fudgy, and puffy. The dough is basically a good transport system for the chocolate chips, so use really good chocolate chips. Oh, and Ghirardelli cocoa powder is really good." Double Chocolate Cookies 1 1/4 cups (2 1/2 sticks) butter, at room temperature 2 cups granulated sugar 2 large eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 1 1/4 cups Ghirardelli premium unsweetened cocoa 1 teaspoon baking powder 2 cups Ghirardelli classic white chips Preheat oven to 300 degrees. In bowl of electric mixer, beat butter with sugar at medium speed until creamy. Add eggs, beating at low speed until combined. Add vanilla. Add flour, unsweetened cocoa and baking powder to creamed mixture and fold until combined. Fold in chips. Roll into 1-inch balls and place on a baking sheet. Allow 3 inches between cookies. Bake at 300 degrees for 16 to 18 minutes. Let cool 10 minutes before removing from baking sheets. Makes 3 1/2 dozen cookies.

Alexa *********************************************************** Holly Berry Cookies Servings: 12 Ingredients: 2 cups all-purpose flour 1 cup white sugar 1 teaspoon ground cinnamon 3/4 teaspoon baking powder 1/4 teaspoon salt 1/2 cup butter, chilled 1 egg 1/4 cup milk 2/3 cup seedless raspberry jam 2 cups confectioners' sugar 2 tablespoons milk 1/2 teaspoon vanilla extract 1/4 cup cinnamon red hot candies 4 drops green food coloring Directions: 1. In a large bowl combine the flour, white sugar, ground cinnamon, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs. In a small bowl beat the egg and 1/4 cup of milk. Add this to the crumb mixture until the dough is moistened. Cover and refrigerate for at least 1 hour. 2. Preheat oven to 375 degrees F (190 degrees C). 3. On a lightly floured surface roll out the dough to 1/8 inch thick. Cut with a 2 inch round cookie cutter. Place on ungreased baking sheets. 4. Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes or until edges are lightly browned. Cool on wire racks. Once cool spread jam on half of the cookies then top each with another cookie. 5. To Make Glaze: Combine the confectioners' sugar, 2 tablespoons milk and vanilla until smooth. Spread glaze over the cookie and decorate with red cinnamon candy before the glaze is set. Let dry. Using a small new paintbrush and green food coloring, paint holly leaves on cookies.
