By-pass Built-In Dimmer on LED light bar

I purchased an LED light bar which has a built-in dimmer switch. I want to mount it in a place where I won't be able to reach the dimmer switch. I had hoped to leave it on, and use another dimmer switch at the plug end, however, putting a dimmer on a dimmer seems not to work.

Can I cut and splice wires to by-pass the dimmer knob built into the fixture and use a "table top" dimmer that the cord from the lamp would be plugged into?

Here's picture of the wiring - power comes in from the white line which splits at the caps to a blue line going to the LED power supply on the right and a brown line going through the dimmer knob (white box on the left). Coming out of the dimmer knob are three wires (black red and white). I'm guessing that the black/red/white wire could get directly wired to the power cord, replacing the brown wire.
