I was in the mood to cook and have family at home this Easter and bought a ham, prime rib and a turkey while on special, but we are so spread out over two states and everybody so busy, seems we are meeting at a restaurant to make for shorter drives for everyone. (my shopping went into the freezer) Still will be fun, I haven't seen my brother or my sister since Christmas. Happy Easter everyone!

Sandi, here is the orange/tapioca jello recipe: 2 pkgs. orange jello 2 pkgs. vanilla pudding (not instant) 2 pkgs. vanilla tapioca pudding (not instant) 6 cups boiling water *(l- 12 0z. cool whip for later) *(1 - can mandarin oranges for later) To the 6 cups of boiling water, add all ingredients except cool whip. Cook, stirring so it won't stick, til it thickens. *Let cool & then add the 12 oz. cool whip and 1 can mandarin oranges. Refrigerate overnite, this is almost like a dessert it is so good, everyone loves it, there is never any waste! Sounds heavy, but it's really light & creamy.

Amish Soda Cracker Pudding Recipe 18 soda crackers 1/2 cup brown sugar 1/4 cup butter 2 Tbls. peanut butter 3 cups milk 2 eggs 2 Tbls. cornstarch 1 cup white sugar 1 tsp. vanilla 1/2 cup coconut Directions: Melt butter and penut butter. Add to brown sugar and the cracker crumbs and mix well. Place in pan, pressing crumbs to sides and bottom. Reserve 1/4 of the crumbs for topping. In a sauce pan, combine milk, eggs, cornstarch and white sugar and boil over medium heat until thickened. Add vanilla and coconut. Pour slowly over crumbs and refrigerate. When cool, sprinkle remaining crumbs over top. Sue

I thought I had another week. I'm going to keep it simple: ham, potatoes, homemade bread or rolls, something green like asparagus and maybe a dessert. All three teenagers fussed last year because the Easter Bunny didn't hide eggs so I went Hobby Lobby the next day and bought the football size plastic eggs on clearance. This year there will be a hunt with some really cool stuff. I guess I need to go shopping.
