Easter menu?

I think I have got mine planned. Leg of lamb, studded with garlic slivers, rubbed with olive oil and rosemary and with wedges of lemon and some oregano and more garlic inside.

Salad of baby greens and bibb lettuce lightly dressed with Myer lemon olive oil and tangerine balsamic vinegar with a little kosher salt and perhaps some Maytag Blue crumbles.

Risotto, with pesto, sundried tomatoes and pine nuts.

Roasted asparagus...perhaps with a few drops of dark sesame oil.

Carrot timbals...or mini casseroles or whatever...

Bunny buns.

And I think I will make a white, corn starch cake in a 8 1/2 by 11 pan, cut into halves and split the layers and spread with something....either pastry cream and strawberries or whipped cream and strawberries or lemon curd lightened with whipped cream or lemon curd...

Gotta think on that.

So....what's everyone else fixing?

Well, I'm also having lamb, or at least Elery is. The boss gave me a recipe for Spanish Lamb that involves cutting plugs from the lamb and inserting an olive and a pearl onion in each hole, then filling the hole with a mixture of rosemary, lemon, garlic, I forget what else. Replace plugs and roast.

I'm also doing a ham, just baked because Amanda, David and the kids like that and none of them will eat lamb. I don't care for either very much, but I'll eat ham if that's what there is, or skip the meat entirely and eat the rest of the meal!

Au Gratin potaotes, because what's not to like about cheese.

Green beans, probably sauteed with a bit of bacon. The grandkids like them pretty plain, but they'll eat 'em with bacon.

Sol's Honey Rolls. 'Nuff said.

Woodie's 7 layer salad because Amanda loves it and it uses hardboiled eggs, LOL.

An apricot/pineapple/pecan/cream cheese salad kind of thing that takes Jello. I don't eat Jello but it's another one of those things that the girls just love.

For dessert we've having a multi layered dark chocolate cake with chocolate ganache filling. I'm going to play with fondant, make it green like a garden. I made a panoramic sugar egg with a bluebird inside, it'll go on top with a bunch of royal icing daisies, forget-me-nots and rosebuds so it'll look like the Easter bunny came and dropped an egg in the middle of the garden. Yeah. Well, not a garden in Michigan, it's supposed to snow all weekend, LOL, and the grandkids ate quite a lot of the icing flowers so the garden will be sparse.....

And, of course, chocolate bunnies.

Bloody Mary Bites Prepare night before 1 pint cherry tomatoes (about five tomatoes per person) (Best if you dip them in boiling water for 10 seconds, and then plunge in ice water and peel. But I'm not going to peel cherry tomatoes, so stabbed them several times with toothpicks, leaving the pick in the tomatoes.) 2 Tbsp hot pepper sauce vodka to cover For dipping, combine: 2 Tbsp lemon pepper 2 Tbsp celery salt Remove the stems from the tomatoes, and place them in a shallow bowl. Pour vodka over so that they are covered. Stir in the hot pepper sauce. Cover, and refrigerate overnight. To serve, mix together the lemon pepper and celery salt in a small dish. Serve the tomatoes floating in the vodka & the S&P beside so people dip the tomatoes in the mixture. I made Pioneer Woman's jalapeno thingies for Super Bowl Sunday & people loved them. I assembled & froze them a few days before. They can sit out also. Bacon-Wrapped Jalapeno Thingies Fresh jalapenos, 2 3 inches in length (4 to 5 per person) 8 to 10 oz cream cheese, softened Thin, regular bacon, sliced into thirds (about seven slices) Slice the jalapeno in half length-wise. With a spoon, gently scrape out the seeds and white membranes. Wear gloves so the juices donÂt burn your hands. Smear cream cheese generously inside each jalapeno half. Wrap 1/3 slice bacon around the jalapeno snugly, but not tight. Stick a toothpick through the middle of each one; this will keep the bacon from coming off in the oven. Place them on a pan with a rack (so bacon grease can escape) and bake at 375 degrees for 20-25 minutes. If bacon doesnÂt crisp, turnoven to broil & cook 2 to 3 minutes longer. Serve hot or at room temperature. Can be assembled ahead & frozen, then baked frozen. Err on the side of undercooked, since you will be putting them under the broiler for additional minutes later. Plunge into an ice water bath to retain color and halt cooking. Drain very well. (I went as far as putting them on a clean kitchen towel and patting dry.) Preheat broiler. Arrange asparagus on broiler proof platter. Mix softened butter with basil, garlic and lemon juice. Season to taste with salt and pepper. Put butter mixture in microwave and heat until pourable. Drizzle butter mixture all over asparagus, then sprinkle the parmesan on top. Broil asparagus until topping browns, watching closely to avoid burning. If you had to use a cookie sheet to broil them, slide a flat spatula under them to transfer to your serving platter - this will keep the yummy Parmesan crust attached to the asparagus.

I am trying to think of Easter dinner here. We had ham sandwiches on the run while Uncle Gene was in the hospital. We planned ham for supper the night after the funeral when relatives were here. The gals that served lunch after the funeral were great, but guess what the sandwiches were, you guessed it ham! That was all from Sunday to the following Saturday. I am SO hammed out! After the past two weeks of running from hospital to the nursing home to a different hospital, to the funeral, the whole family won't be together for the first holiday without Gene. I actually don't give a hoot if we have Easter or not. I have nothing for the GB's baskets even. I didn't realize til last Saturday Easter was so close. I am strongly leaning towards roast beef or turkey. Thinking roast. Beyond that I have no clue.

I don't know if we will be going somewhere or staying home yet so that will make a difference. Pretty sure ham will be involved either way. If we stay home I would love to have hubby put a ham in the pit I love smoked bbq ham. as to recipes they are extremely difficult to copyright and rarely are because the change of one or 2 ingredients or amounts makes it a different recipe. And for giving the credit to the original how the heck would you know the original creator for a recipe that has been handed down for generations, I have a collection of church cookbooks from Louisiana and the South and Jr. League cookbooks. I can not tell you how many have the same exact recipes in them which were "contributed" by someone. That is what is done recipes are contributed and then often times the person who contributed it their name gets added on as a way to remember it. I have recipes I have contributed for years to various forums etc many have my name attached now, I didn't do that others did. Now when I do have an original recipe that I created my very own self I will say this is an original. I may later see my original recipe re-posted somewhere with out giving me credit or even with someones name attached. That means it must have been pretty good because it is being passed around! Enjoying them is the pay off! Glenda I have so many of my cookbooks that look just like yours, very loved LOL.

Same old here: ham, polish sausage, crescent rolls (NOT from a tube :), some kind of fresh veggie (whatever's not too limp in the produce section), potato salad, baked beans, Glenda's pineapple casserole, deviled eggs and of course, my grandmothers apple cheese strudel and her walnut potica . . . I devote a whole day just for the strudels, and they're worth every second :)

Same old, same old, here too with a few minor changes/additions. Last count we were up to 20, all family, but at the rate they are ticking me off I may just "come down" with something highly contagious and cancel!

Roast turkey, stuffing and gravy (additon, due to dietary restrictions of my niece's boyfriend, no pork)

Was going to do a cheesecake but I've decided I'm not doing anything. If someone else doesn't offer to bring dessert, there won't be any.

We're going to friends for Easter dinner... my GF is making a ham from the pig (named cow) that they raised.
I'm bringing a fresh fruit salad and I don't know what the rest of her family is bringing.

I'm making ham with a raisin glaze, orange-garlic chicken breasts, scalloped potatoes, corn, deviled eggs, frog's eye pasta salad (mom's bringing that), something green (green beans with bacon, or roasted asparagus if I decide to splurge), and a cheesecake that I plan on decorating with pastel green colored whipped cream, pink and yellow "Peeps" bunnies, speckled egg M&M's, and sugared mint leaves.

And chocolate bunnies for everyone, of course. Dessert is the most important part, right?

Other than that, I'm still mulling it over. I saw fresh asparagus at the store, if it looks good this weekend I may go with that. Probably carrots too. I had wanted to try risotto, but I guess that won't go very well with hash brown casserole :)

It will just be DH and I this year (and maybe DD#2 -- 20-yr. old that works graveyard).

I'm going to make Roast Pork Loin, broccoli, deviled eggs and some kind of bread (maybe what's left of Lars Pumpernickel) and call it good.

Haven't decided on dessert yet.

I think we'll be having duck....have yet to think how but I have two duck thighs in the deep freeze so probably with an orange or pink grapefruit sauce. As there's just the two of us and we don't eat much, there'll be some vegetables or salad and maybe, just maybe, some kind of a fruit dessert, baked in pastry or maybe even a fruit pie! Have some good wine put aside, so by Saturday I guess I should have something definite organized. :-)

Everything sounds so good! Gina - would you pst the corn pudding recipe? That sounds like it would be a great addiiton to my menu.

Here you go Alexa, it's a breeze to make:

Sweet Corn Pudding

1 cup fresh breadcrumbs
6 tablespoons self-rising white cornmeal mix
1 1/2 tablespoons sugar
1/2 teaspoon salt
3 large eggs
1 1/4 cups milk
1/2 cup half-and-half
2 tablespoons butter, melted
1 (20-ounce) package frozen cream-style corn, thawed
Garnish: green onions

Combine breadcrumbs and next 3 ingredients in a large bowl.
Whisk eggs in a large bowl until pale and foamy; whisk in milk, half-and-half, and butter. Whisk egg mixture into breadcrumb mixture; stir in corn. Pour into a lightly greased 9-inch square baking dish.
Bake at 325Â° for 1 hour to 1 hour and 5 minutes or until set. Let stand 10 minutes before serving. Garnish, if desired.
Yield: Makes 6 servings

Linda, I'm glad you posted this. I'm boycotting holidays and hadn't even given it a thought. We always had ham but with all the discussion of lamb lately I think I'll do a leg of lamb also. I haven't had it since I was a kid and only once or twice. I'm going to make porcini risotto with the ingredients Maria sent me in the swap. I may even do the lamb on the pit. Thanks for prodding.

Lamb of course (who ever heard of the Ham of God?)!

But for a real Italian Easter we will have Easter Pizza
(Eesta Peetz in my family) with cocktails. Eesta Peetz
is a deep flour/egg/oil shell filled with a bazillion
beaten eggs mixed with pepperoni, Romano, Ricotta,
Pine Nuts and black pepper, lattice top, then baked
a long time.

The aroma lingers for days.

Oh, I forgot to add that we're having devilled eggs ala Marilyn. I'll dye the eggs blue, pink, green and yellow but the "stuffing" recipe is my own because I like horseradish in mine.

Geez, Louise! So far I know I am making a ham. I don't know what I am serving with it yet, and I don't know who (if anyone) will be joining us for dinner!

Everyone is so scattered at this time of year. Mom's still in Florida, one sister moved 200 miles away, daughter lives in Chacago, one sister in Maryland, son & daughter in law rotate holidays between 4 sets of parents....

Easter has just kind of fallen thru the cracks for us. But even if it is just Tim and me, we'll have a nice dinner.

This will be my first Easter dinner for my DH's entire family...I think we are up to 15 as of yesterday. My SIL usually has the family dinners but she started a part-time job as a bar hostess and hemmed & hawed when asked to host dinner. So I graciously offered, never thinking they'd all drive 2 1/2 hours just for dinner. So it has to be good.

Menu
whole ham (19 lbs) baked using Alton Brown's recipe
scalloped potatoes
another starch-most likely mac & cheese if I'm energetic enough
SIL # 2 bringing vegetables to be steamed upon arrival.
SIL # 1 to bring another veggie of her choice (but I'll have corn or green beans on hand just incase)
homemade applesauce
dinner rolls to be provided by FIL & SIL #4 (but I may try making sour dough rolls or bread as a backup)
deviled eggs

Desserts:
cherry crumb pie
I've asked DD#2 to make a coconut cake...she said she'd bake something. But she's a good baker so I'm not worried except that she has to make it at my house and I'm hoping she finishes before I want to clean up the house Sat.

local wines for the ladies & beer for the gents

And I have to have this all ready by 2 PM, so I know I won't make it to church.

I'm in the same boat as Linda (doucanoe). The family is pretty much scattered this year, so it's only me, DH, our son and my mom. My mom wants to treat us for a dinner at a restaurant, and I won't resist! I normally have all the family dinners at my house (Thanksgiving, Christmas, Easter, a couple family reunion picnics) so I don't mind the reprieve. Besides, we are leaving on a ski trip next week, so it gives me time to pack instead of cleaning and cooking. I'll miss it though. I love cooking a big ham dinner and setting a pretty spring table at Easter.

Wow, my mouth is watering. We're going to my aunt and uncle's for Easter. They generally have about 30 people.

There will be Leg of Lamb, Country Ham, Dilled Carrots, Deviled Eggs, 7 Layer Dip...that's all I'm aware of right now. Probably lima beans with mushrooms since my aunt loves them. And I'm sure she'll have someone bring scalloped potatoes. She'll also have her famous braided egg bread that she makes every year.

I'm making the 3 layer lemon curd cake with coconut frosting that I made last year. It was featured both in Southern Living and Family Circle, and it's really good.

Happy Easter, Peeps:) Well, I waited until the last moment hopping (lol) that we would get an invitation! LOL Like a few said here we seem to be spread out at Easter:( So, just us.

I prefer Ham but DH won out this year (and he has the nerve to be sick with a high fever!). Here is our menu:

Appetizers
Stuffed Mushrooms
Spinach and Artichoke Dip with crackers

(we will skip lunch and have the apps)

Dinner
Spring Pea Soup
Roast Leg of Lamb
Roasted Rosemary Potatoes
Asparagus with Vin Santo Vinaigrette (Giada)
Marinated Cucumber Salad with Dill

Dessert
Carrot Cake (2nd try - LOL)

Have a nice bottle of Fleur Pinot Noir for dinner and will have a wee bit of the Vin Santo with dessert.

Breakfast was jelly beans and peanut butter eggs.

Annie, I wish you'd take a picture of that cake, it sounds beautiful! It's probably half gone (at least) by now anyway. I'm just baking a ham with pineapple juice and brown sugar glaze (thanks Lincac... it's in the oven now). I bought some bread pudding at Publix yesterday and it is WONDERFUL, so I'll be having that as well... before going into work! I may bring the ham in with me... I could use some help eating it!

Breadsticks (purchased bake at home)
Easter Pie (Giada recipe I have been wanting to try)

So, it's kinda like you are all here with us for dinner! LOL

Happy Easter to all Peeps!

It is just dad and my syself, so I kept it simple. Breakfast was eggs Benedict, so no lunch but dinner is:

Roast leg of lamb with a mustard herb crust
Rice Pilaf
Asparagus with leftover hollandaise
A bottle of merlot or pinot noir.
And I baked a cheesecake yesterday so I may pull some strawberries from the freeze,and make a fast sauce.

Snacking on chocolate right now. It is not Easter without lamb, asparagus and chocolate.

Cucumber and Onion salad

Grape salad
Yeast Rolls
Better than Robert Redford Cake
Angel food cake with strawberries and whipped cream
and cupcakes that 3 1/2 yr. old DGS decorated(with lots of sprinkles)

Everyone just left, the dishwasher is loaded, the napkins are washing and I just sat down with a glass of wine. I am tired!

Ahhhhh....Dinner was good! The ham was succulent, the potato gratin was fabulous as always, the carrots were gone in a flash, & sister brought a Nicoise Salad that was wonderful!

The Asparagus with Parmesan Butter and the Easter Pie were merely passable and will not be going into my T&T files. But all in all we had a tasty and very filling Easter dinner!

They are finally gone!

Kitchen is sorta cleaned, we decided on a dip in the hot tub instead of the kitchen sink. Clive is cleaning the rest up now, gotta love that man!

The day was what it always is, too much food, lots of laughter, lots of yapping .....all at the same time, too much talking politics......American politics at that! LOL

My niece was home for Easter for the first time in four years, she has been in England and South Africa. It was so great to see her!

The family had been ticking me off royally leading up to today but when I am with them on a day like today, I realize just how lucky I am to have such a large and loving family who would stick with each other no matter what.

It was a very Happy Easter!

Wow. Now you all have got me craving ham, lamb and asparagus. Well, I do have some nice asparagus in the fridge, so I guess that's one third of the craving that's easy to fix.

My husband and I decided on a quiet Easter. We went to church, and took a nice drive in the Sierra foothills. We saw a fox trotting across a field and he turned to look at us. Also 2 of the cutest baby horses with their mommas who stopped chasing each other around just long enough to stare at us. Lots of wildflowers.

Then, once home and with hubby napping, I made stock with shrimp shells (I've been saving up, lol) and a dungeness crab shell, plus a bit of instant Japanese fish stock. This became the base for a nicely spicy Cioppino, with Salmon, Eastern Scallops, hard shell Clams, green lip Mussels and of course, the crab. Boiled artichokes with mayo dip and a nice crusty baguette. Voila! Easy and very good Easter dinner!

My poor, long suffering husband...once again, it didn't even occur to me to make dessert, but there were some grapes!

My son and his girlfriend called at the last minute and asked for dinner (all Atkins) on Sunday, since he wanted to come over and work on his car.

I got a nice leg of lamb at Wegmans, and followed the directions from Cooks Illustrated for brining. It was delicious. I made a vegetable casserole with a recipe my BIL made a few weeks ago, and broccoli, and finished with sugar free creme brulee. It was a good meal.

I must say, I do miss the rolls and potatoes, especially since I made a great gravy, but have to agree with my son about the carbs. When I eat them, I pack on the pounds.

The two of them are going to San Diego in May for a weekend of surfing lessons - so they need to look great!

Mine was great too, Elery and I and Ashley got up early and went to church, the first time Elery attended my church. He was impressed with how comfortable everyone was, all the hugging and personal interaction. One young lady got baptized and the Pastor waltzed her around the front of the church in celebration, LOL, and invited the congregation to "join the dance of spring, of joy, of renewal". Several did, including one elderly couple who happily waltzed in the center aisle.

Dinner was good, even the dreaded lamb. Bud ate mostly chocolate bunnies and dinner rolls, but Makayla didn't even hesitate to try the lamb, although she liked the ham better. No augratin potatoes for her, but seconds on the green beans and Woodie's 7 layer salad.

I took a picture of the infamous cake, a 3 layer fudge concoction with fudge ganache filling and a layer of light green fondant, that big pink panoramic sugar egg on top and cascades of royal icing roses, daisies and forget-me-nots.

We had an Easter Egg hunt, then Ashley had to go to work and Elery had to leave for home, Amanda helped me with the dishes while the "kids" (including David, LOL) watched Dukes of Hazard, the traditional Easter movie. (snicker)

I sent the leftovers home with Amanda, the lamb with Elery, and now I'm planning a Passover dinner in solidarity with my Jewish friends here. I've got this recipe for gefilte fish....

Shaunn, I don't have a computer at home, the hard drive on mine is toast. I can't download pictures to the computer at work, which is where I've been posting from. So, I have pictures and no computer to put them on! I can't even email them.....

Well Easter is over but we are still eating some leftovers (I always cook too much but I would rather have more then not enough).
