Hi Sandi, we always do a baked spiral ham and also do a turkey breast, some of the grandkids don't like ham but like turkey.

My potatos vary, sometimes I do my potato salad & other years I try something else, may do scalloped potatos this year.

My jello salads vary also, I have quite a few that everyone likes. The orange/tapioca one is their favorite.

Usually do corn casserolle or green bean casserolle for the veggy, but have done baked beans at times too.

Desserts vary also, so other than the ham & turkey, I guess I get bored easily & like to try new things!

Strawberry fluff sounds interesting, what is it? I'm always on the outlook for new things.

Desserts, this year I'm doing a lemon pudding cake, where the pudding goes to the bottom, tried it a few weeks ago & it was delicious, then I'm buying a few pies from this new store we have in town.

They are called Jeffreys pies, all natural, all fresh ingredients, apples, peaches etc. I tried the apple one a few weeks ago, OH MY, better than homemade, has walnuts on the top too & the juice of the fresh apples bubbled up on the top crust & it is soooo yummy, not worth trying to bake one homemade when these are so good. We went there today & they were "sold out" so I have to get mine early & maybe freeze them for Easter!!!

Yachter, Your dinner menu sounds wonderful. And those pies from Jeffrey's sound wonderful also.

DH loves orange jello and tapioca, but I've never heard of them together. I would love to have that recipe please.

Strawberry Fluff. I'm sure you've made it by another name. It's the old easy cool whip, strawberry pie filling and pecans mixed.

Sandi~ we usually do the same every year: spiral ham,potato salad, corn on the cob, devilled eggs, pear salads, some kind of homemade rolls, banana pudding, and apricot nectar cake.
This year we are going to be a little different and DH is going to do some Cajun Ribs instead of the ham. (He boils the ribs in some crawfish boil first for a little spice then bbq's them in the oven). Mmmm Heavenly! and the meat just falls off the bones.

For those of you serving eggs of the devil, there's a heaven'ly idea posted on the cooking forum! I haven't tried it so I don't know...It is listed in the Easter Menu/help input thread...about coloring the deviled eggs. Pink, Sandi???
I don't know what I am making tonight no less on Easter...depends on the number of "peeps" coming.
So we will just have to keep this thread going like the Energizer Bunny!

Sandi - you are talking my language now. I originally came to this site for the entertaining and cooking threads, but found my way over here. I can cook much better than I can decorate:).

Easter menu will be:

Starters - toasted baguette slices with goat cheese, toasted chopped walnuts, chopped fresh rosemary and drizzled with honey; shrimp cocktail and veggies with hummus for the kids.
Dinner - Spiral Ham with raisin gravy, Asiago potato gratin, roasted asparagus, brocoli/cauliflower "slaw", deviled eggs & still working on last dish - onion rolls
Dessert - Coconut Cake; some kind of chocolate cake or torte, lots of easter candy and fresh fruit.

If I could just get the table decorating together I will be set.

Ummmmmm, my mouth is watering too! DD and myself might have to postpone our Autinn flight, so I could be making Easter dinner. Her DH went house hunting and found a brand new home that fell out of escrow, with $40,000 worth of extras, and coming from CA, knew a good deal when he saw one. We don't want to move twice, so will probably wait until after the closing to leave.

Sooooooooo, my menu is usually a Honeybaked ham, King Salmon(several of us don't eat meat), salad w/vinegarette dressing/goat cheese, scalloped potatoes, sweet potatoes, green bean casserole, asparagus/hollandaise, fruit salad(mandarin oranges/pineapple/sourcream, mineature marshmellows), cornbread/honeybutter, a couple of pies, and i'm thinking of the lemon/lime jello cake I haven't made for awhile. And a couple of good wines, of course! Kids get cider.

I really hope we're home for Easter, but i'm leaving the decision to DD since her DH has already been in Austin for two weeks, and she and baby miss him terribly. ;o(

No one likes ham in my or dh's family, and dh is allergic to a lot of seafood. I will probably ask my dad to bring lamb. He makes it so well. I will make some kind of pasta dish, salads, cut up fresh fruit, sil will probably want to bring a dessert, I'll buy Italian egg bread from the bakery, and dd and I bake cookies.

I just went over and checked out the deviled eggs on the cooking forum. I would like to see what you think. The pastels look ok, but the fourth of July...I don't know.

Labmomma, Your menu sounds very good. Hearing what you're cooking inspires me to try at least one thing fancy and new. I did forget to add that we have slaw also, but that's not fancy. Your toasted baquette slices sound great.

Patty_cakes, Nice to hear from you again. It sounds like yall have a terrific Easter menu also. And congrats to your daughter and his hubby on finding the perfect home right away.

Secondhandrose2, I think a lot of people have lamb for Easter dinner. We never have, but I think it comes from where I grew up. I didn't know anyone that ate lamb. I've heard it's my loss! There's something about Easter and salads and fruits that go so well together.

Everyones food sounds great. My food choices are usually "decided" by my DD, she hates ham (too sweet for her), so I usually do some sort of Italian or seafood. She loves bread and desserts though LOL (and she is skinny, so not fair...again, switched at birth)

Judith, I don't do sweet ham either. I like the salty ham, but DH likes the sweet stuff. He even puts sugar on grits!

What are grits??? Kidding, I know what they are, don't think I had them,maybe in Fla once.

I know one thing we will def have, kielbassa, not the Hickory Farm kind, from the Polish market. I won't touch it, but DH trad to have it. Pierrogi too, but I hope he buys them cause they are a pain to make!!

Now Kathleen, I know what Pierrogi is since you have already explained it to me, but you need to tell everyone else here what it is. Or maybe everyone else already knows and I am just culturally challenged! LOL

I like kielbassa ok, but it's not my favorite. I really like the grocery store Polish sausage though.

Pieroggi, like a ravioli filled with potato and cheese or pot and kraut, with onions oover the top. This Irish girl had never seen them till I got married. I like them now though. Home made are much better, but too much work, I like the pastries he makes though, very good!

Since the polish market opened a block from my house, and I sampled their homemade pierogi, we have them once a week at my house and we all have the waistlines to prove it.

Yes, you must go out and work in fields to burn those little pockets of yumminess off! LOL We have a Polish community in our town, our church is called Our Lady of Poland and one Mass is in Polish. When they have a bake sale even my dh wants to go to church, they make some lovely things!

Sandi, here is the orange/tapioca jello recipe:

2 pkgs. orange jello
2 pkgs. vanilla pudding (not instant)
2 pkgs. vanilla tapioca pudding (not instant)
6 cups boiling water
*(l- 12 0z. cool whip for later)
*(1 - can mandarin oranges for later)

To the 6 cups of boiling water, add all ingredients except cool whip. Cook, stirring so it won't stick, til it thickens.

*Let cool & then add the 12 oz. cool whip and 1 can mandarin oranges.

Refrigerate overnite, this is almost like a dessert it is so good, everyone loves it, there is never any waste! Sounds heavy, but it's really light & creamy.

Sandi, the strawberry fluff sounds nearly like the recipe I have for cherry fluff, but that uses (FAT WARNING) Eagle Brand milk in it too, but very similar.

Sandi, you won't be sorry, I had it some years ago, my one DIL's grandmother made it for her shower & everyone went crazy over it. Between her mom & grandmother they must have made 10 different kinds of jello molds for that shower & everyone was delicious!!

Yachter, Oh now I have to have your Cherry Fluff recipe. Pretty please. I love sweetened condensed milk. It sounds much richer than my fluff. I have to look for a bunny mold for your orange/tapioca jello for Easter.

Yes Yachter, please post the Cherry Fluff recipe. I just found out there will be two more for Easter. My BIL and SIL will be coming in from out of town so I need to add a few dishes and yours sounds delicious.

I have a desert recipe that is just wonderful. Yes it is sweet and adds on the pounds, but isn't that what desert is all about!!! No bake recipe - makes 2 pies. --- Sal

---- Million Dollar Pie -----

1 large can Crushed Pineapple, drained
1 - 10 oz container of Cool Whip
1 can Eagle Brand Condensed Milk
1/4 cup Lemon Juice
Walnuts
2 - Premade Graham Cracker Crust Pie Shells
-------

Mix all ingredients in a large bowl and pour into 2 pie crusts. Sprinkle top with Walnuts. Can be served immediately. Cover and refrigerate leftover pies.

Sal, The Million Dollar Pie sounds delicious and you can be sure I'm adding it to my list to make. In fact, I think I'll make it tomorrow night for dessert. Thanks for sharing with us.
