Cabbage for sauerkraut

I have 2 heads of napa cabbage and 1 pretty big green cabbage. I need to make kraut as we are on our last jar. Is there any reason that I can't use all 3 heads together or should I just use the 2 napa and do something different with the green? I also have a big head of bok chop but I figured that is a bridge too far. (I'm behind on using the CSA veggies.). I'm thinking of making it kimchi-esque with garlic, a little hot pepper, carrot, and watermelon radish. I thought I would leave the ginger out since I could always add some when using if that's the drirection of the dish. I'll be using my 10 liter Harsch crock to ferment.
