Another Bacon Post

It seems I have bacon-brain lately. But anyway, I always look for the best bargains on bacon. It has to be thick-cut but that's the only rule. This time there was a very good deal at Save-a-Lot and I had bought this brand before and it was good. This time, although it looks, smells and tastes normal, when I cooked it, there was hardly any fat that rendered out yet I was able to cook it until crisp. (I can't tolerate flabbiness in bacon.) Also the texture was on the chewy side. Any ideas on why this happens? I've had it happen a few times before.
