Comments (17)This is a variation of a recipe for microwave béchamel given by Barbara Kafka in her book, "Microwave Gourmet Cooking." BÃÂCHAMEL SAUCE Add two tablespoons of butter or margarine to an oven proof glass casserole bowl. Cover with a paper towel, and microwave on high for one minute. Add two tablespoons of flour, mix with the butter or margarine and heat, covered, on high in the microwave for 1-1 1/2 minutes. Add 1/2 cup of chicken stock and 1/2 cup of 2% milk. Stir to break up lumps and microwave on high for 2 minutes. Check after two minutes to see if it needs to be stirred. If so, stir and heat for another 2 minutes. Add another half cup of milk and heat on high for 4 minutes. After this time the béchamel should be about as thick as heavy cream. If too thick, adjust with chicken broth, and cook until creamy, usually about 2-3 minutes. If too thin cook for another 4 minutes. If still too thin, add two tablespoons of flour dissolved in 1/3 cup of chicken stock. Cook another 4 minutes until creamy. After making this sauce a few times, it becomes easier to judge exactly how much liquid is necessary to obtain the consistency desired. At this point, the béchamel can be seasoned in a number of ways. Add salt to taste, and 1/8 teaspoon of black pepper. Alternatively, add 1/4 teaspoon of ground nutmeg and 1/8 teaspoon of white pepper. (Careful, the white pepper has a strong flavor) Cover the béchamel and set aside. Comments (16)I'm just beginning to exercise for real again after all the problems associated with my chemotherapy for the lymphoma diagnosed in July. Have my "ok" from the doctor and have an appointment next Wednesday for an evaluation at the fitness center. I'm anxious to start, but want to be careful not to aggravate any old injuries that have healed while I've been a couch potato. I've been walking the dog about 15 minutes twice a day for the last several days. Comments (17)Good luck on dumping. I'm not sure what level of hoarding you are referencing, but I know you can't clean or fix up until you empty everything out. I ended up walking two miles last night with dh. Not sure about today. I got up at 4 am because my middle child had to be at school for state competition at 5 am. My oldest one has two band events today and has to be there at 7 am and then someplace else this afternoon. I can't go back to bed right now. Comments (75)All the brassica I I have started germinate quickly and grow well, and the seeds are cheap. I dont buy a lot of hybrid seeds because they cost too much. I buy most of my seeds by the ounce at farmers co-op, and they have cost from .69 to around 1.99 an ounce, you can get a lot of seeds in an ounce. I can use a pack for 3 or 4 years and toss the rest of the seeds out in the pasture of feed them to the birds, and still be better off than buying plants for a buck each. But I will agree that about everything is going up like crazy. My neighbor called me yesterday morning and ask me to start him another 40 Sungold and another 40 Early Girl, when I told him that I was out of both of those seeds, he said that he was in town and would stop and get an once of each. When I checked with him yesterday evening, he told me that they were over $300.00 an once, and he did not order any. I think that he is beginning to realize how much money I saved us last year by starting 1300 tomatoes and 750 sweet potatoes, because the plants here were selling $1.00 each buying them by the 6 pack. I ordered some Red Snapper tomato seeds from Walmart online and they were $20.00 for 50 seeds, and they are not here yet. I also ordered 20 Hossinator tomato seeds, and I think that they were .40 each. I don't normally do this, but Madge ordered some kind of wild. unknow tomato seeds last year and was really happy with them....See More- 9 years ago
