Make Ahead Whipped Cram

I was asked to bring dessert. Pumpkin pie was one choice but alas, I'm NOT a cool whip person so what to do about whipped cream. You don't know the mixer situation of the hostess (is it put up and does she have to get it out, does she have one, etc.) and I'm not about to whip it by hand. So I thought Ina Garten (the Barefoot Contessa) has a make ahead whipped cream. We left a little after 9 and were to eat at 1. The instructions said four hours so that would be close.

I made it, put it in a bowl covered with saran wrap and put it in a cooler with ice in the bottom. It arrived at 11 and all was good. We put it in the fridge and got it out about one. All was good. It was certainly tasty.

When we left at 4, the whipped cream was STILL good!!! When we got home 2 hours later it is still good! I'm sure it will be satisfactory for the pumpkin pie that we'll have in a little bit.

My take on this whipped cream -- it is terrific and I will definitely make it again.

Oh, and there is no creme fraiche here so I used sour cream.

INA'S MAKE AHEAD WHIPPED CREAM

1 1/2 c. cream
2 t. sugar
1 t. vanilla
2 T. creme fraiche (or sour cream)

Put all in the bowl of a mixer and mix on high speed until whipped.
