Question about freezing ingredient to use later in canning

I am wondering if I can chop up my green tomatoes (I am using cherry tomatoes), in the food processor, put them in a freezer ziplock bag, and freeze them to use later to make green tomato relish & vegetarian mincemeat? I have been working more days than before at my son's business, babysitting grandchildren, and caring for my 93 year old mother who is a pistol! No time for green tomatoes now. They would only be frozen for a week or two.
