Question about freezing ingredient to use later in canning

I am wondering if I can chop up my green tomatoes (I am using cherry tomatoes), in the food processor, put them in a freezer ziplock bag, and freeze them to use later to make green tomato relish & vegetarian mincemeat? I have been working more days than before at my son's business, babysitting grandchildren, and caring for my 93 year old mother who is a pistol! No time for green tomatoes now. They would only be frozen for a week or two.

It is a common practice for many and often discussed here. Be they green or ripe, the only issue is the difference in texture. They will be much softer when thawed and will need some draining.

I dice some peppers so I can just knock out what I need for soups, etc. I learned my lesson about being too frugal trying to save on bags. I chopped onions and froze in a gallon ziploc. By the time I used them up, they had pretty well frozen into a solid block from the bit of thawing each time I took them out of the freezer. It didn't really pay to save a few bags. Smaller sizes are easier to work with! You can stuff the peppers and freeze them too! Otherwise.........what Dave said!! LOL Deanna

Freezing lasagna reminds me of when our daughter was in college and we would package up homemade frozen food and fill her freezer. I would bake lasagna and then portion it into small foil pans (don't forget to spray them with Pam). Wrapped them in heavy-duty foil and took them to her frozen so she could reheat them a serving at a time. So that's another freezer option. I now make packets of lasagna roll-ups for the freezer for ourselves. Works much better for serving 2. -Grainlady

One company might call a product jam and another might call it preserves. They're different from jelly of course but the differences between them are more by company than by definition. I know I've had "preserves" that look more like "jam" and vice versa, dependent upon the brand. As I recall the federal regulations when I looked it up once, they're covered by the same regulation and the requirements are the same for them so that tells me it's a company differentiation. Not much different than the argument that a "hoagie" is different than a "submarine sandwich" from a "grinder", etc. As for a recipe use? Use the kind you like. You'll be more likely to like the recipe more that way.

Yep one thing I learned at the end of some growing seasons, was that the plant I thought would fill up the pot with roots just barely had a small rootball, not worth putting it in such a large pot. So as Nick said, knowing that may help you save some soil. This is why some pots with various plants in arrangement look so great, because you would think the roots are all competing with each other, but in fact, they are growing at different depths or different areas of the pot, not really growing into the entire pot. I have used the techniques of putting stuff into the large pots, or even growing smaller pots in a larger pot, and you can replace the smaller pot with any plant in a similar pot whenever you want. I really recommend that method if soil quantity is a concern. At the same time, you have the beginnings of a good soil mix. The leaves may not be at the right stage for being about 1/3 of your potting mix, but you can also get some bags of compost and mix it with what you have. If the leaves have composted to the fine dirt look, it's good, but if it is still in some rotting stage, it might not be. Donna, good luck, it sounds like you have a lot going on. Life doesn't get boring, does it?

I often freeze things and can them later, mostly fruit for jam because it's so much more pleasant to make jam in January than it is in July!

As Dave said, though, sometimes texture suffers. If you're going to make mincemeat or relish, though, you could probably simmer it enough to thicken to a point where the watery textural difference wouldn't be noticed.

Annie~ you are so right~ life never gets boring for most of us! I ended up making 11 pints of green tomato relish today, and 9 3/4 pints of the mincemeat. The mincemeat is sooo delicious. My mother helped clean peppers & onions for the relish. She got a real kick out of the mincemeat. She made cookies with it when I was a girl. That is what I will do with this. Maybe a pie or two- but mostly cookies. Thanks for your sweet comment.

Donna, my grandmother lived with us and raised me. She also canned green tomato mincemeat and she made cookies with it. Not filled cookies, but cookies that had the mincemeat stirred into the batter.

You are the first person I've ever encountered who also has had green tomato mincemeat cookies!
