Yard long beans may grow up to 24inch long, but it is better to pick them at 12 to 18 inches. While picking, cut the pods with a sharp knife to minimize plant damage, thus maximizing harvest. Leave the pods to reach full maturity, allowing them to dry on plant, if the pods have to be reserved for seeds. The pods will break open and the seeds can be collected. Native to Southeast Asia, this climbing plant is a close relative of the cowpea or black-eye pea. A pencil-thin LEGUME that resembles a GREEN BEAN except that it can grow up to about 3 feet long (though it's usually picked at 18 inches or less). Yard-long beans belong to the same plant family as the BLACK-EYED PEA. In fact, in parts of China the bean is allowed to mature until full-fledged peas are produced in the pod. Yard-longs have a flavor similar to but not as sweet as that of a GREEN BEAN, with hints of its black-eyed-pea lineage. The texture of the pod is more pliable and not as crisp as that of a GREEN BEAN. This LEGUME, also called Chinese long bean, long bean or asparagus bean, can be found year-round (with peak season in the fall) in most Asian markets and some supermarkets with specialty produce sections. Select those that are small (which equates to younger) and very flexible; the peas should not have matured. Refrigerate in a plastic bag for up to 5 days. Yard-long beans are most often cut into 2-inch lengths and sautéed or STIR-FRIED. Overcooking will make them mushy. These beans are rich in vitamin A and contain a fair amount of vitamin C. Comments (11)I forgot to add to the ingredients that I use chili paste, you can substitute for hot sauce or red pepper flakes, to taste and this ingredient is optional. Some people like it hot, others not. WT Your recipe sounds good too. Bon Appetit! Tom I have not tried the purple yard long beans yet. The red and the green that I have, I picked them when still thin, if you can see the seed it is too late. You can still peeled them and cook the seed or save it. I throw out the rest. Now when I start cooking I heat the pan first to hot, the highest setting on mine is 9, then I quickly add the oil and beans together with the garlic. I test that is hot putting my hand close to the pan and feeling the heat. So far, from all the people that I am sharing the beans with (they all loved them!) First time eaters of these beans, and they are not oriental :) Actually, Tom they are a lot like you.lol My neighbor is learning how to cook and he even lost weight as a bonus. We even shared desserts and homemade bread with them sometimes. I said to him "remember the book, one thousand places to see before you died?" Comments (13)Thanks cindy-eatonton, happyday and zeedman! I was able to harvest some beans tonight! DH and I went out a little after 9PM when it was completely dark -- the wasps and yellow jackets were completely gone!! We looked carefully with flashlights just to be sure. The neighbors already think we are nutty when we water our EarthBoxes in the rain. They will have no doubt when they see us harvesting beans by flashlight and auto headlights.... zeedman, I have observed the wasps when they frequent these yardlong beans and they indeed are docile. Normally when there are wasps around our yard they are quite belligerent. The nectar from the yardlongs would be nice to have in spray form. Thanks again, DL...See MoreYard long bean habits and taste
Comments (4)DL, there are "purple pod" yardlongs. They may - or may not - be the same as "Red Noodle"; I have yet to grow all of them for comparison. GW member "greentongue" grew several this year, and reported some differences in a PM she sent to me... I hope she pops in here. There are black seeded yardlongs, but to my knowledge, no black yardlongs. If there is one out there somewhere, I hope I find it. ;-) I did find an unusual "yardlong" this year (with quotes because the pods are only about a foot long). It is a greenish-gray seeded variety from Thailand, with smooth, light-green pods. The seed color is quite unique, and it appears to be an edible-podded cultivar. I will be growing it for trial & seed production next year....See Morenancyofnc
