Help Me Choose the Perfect Pro-Style Range for Me

I'm planning a major kitchen remodel and I want to make exactly one purchase of the perfect range for me. My budget is probably 4-8K for the range. My budget for all appliances is 15K, so if I spend less on the range/hood, I'll have more money for other appliances. The plans call for a 36 inch gas range in a large island so I'll have to put the vent over the range. Having a grill/griddle is not essential as I'm in CA and can grill outside almost every day. I currently have a vintage Wedgewood stove and to date, it is the best thing I've ever cooked on. I'm replacing it because the oven is tiny and it will not work with my new design/layout.

I'm single, but entertain frequently and cook for myself almost every day. I think I use the cooktop and oven about 50/50. I want something that is easy to use and will stand up over time. I'm not interested in fancy features. Simpler is probably better. I like a big oven as that is the one thing I'm lacking currently. I also want something that has the oomph to boil water quickly but that I can control for delicate sauces. I really want to stick with gas. I don't like the look of induction and have invested in very nice cookware over the years and do not want to spend the money to purchase additional/different cookware.

I don't think I'm sophisticated enough to know the difference between sealed and open burners so that is probably not a factor unless it affects ease of use.

I guess the best range would be one that marries quality with value.

If you are budget constrained, keep in mind that an island hood is more expensive than if you have your range against a wall. You'll need a larger hood for an island than if you had your range against the wall. Also, hood manufacturers price island hoods higher than comparable wall hoods. You'll also need more cfms for your island hood than for a wall hood as there is no wall or cabinets to help contain the smoke and grease from floating all around. Your island itself will need to be quite large to hold a 36" gas range plus the needed landing space, plus space so that the people nearby don't get splattered by what you are cooking on the island.

As has been mentioned many times on this forum, more time is spent on prep than on actual cooking so if you want an island range for social reasons, it would be better to dedicate your island to prep.

With a budget up to 8k for 36 inch range, I would perhaps look at Capital duel fuel range, Connoisserrian 6 burners, or it could be Culinarian all gas, 6 burners, or BlueStar Platinum and RNB. These open burner ranges are good at both high heat and low heat.

If you are concerned about buying refurbished products, then you can always purchase an after market warranty. They are not perfect and sometimes you have to fight for them but in some cases, they come through better than manufacturer warranties. Just read the fine print. I've had pretty good luck with refurbished items I've bought but for the more expensive items that have lots of electronics or other hard to maintain parts, I have purchased warranties for them. Also, I've only bought warranties that cost much less than replacement or even repair. For instance $30 for a $400 item. Some will say that warranties are a waste of money and perhaps it is since most are never used. That said, if you are faced with a refurbished deal where you can save $300 and the only thing holding you back is the warranty, then the $50-100 warranty might be worth it for peace of mind alone. In the end, you still save $200. Let's face it, manufacturers build warranty costs into the price of new items so at least you have a choice when you buy refurbished. Also, look into your credit cards and see if any of them provide warranties for items purchased. Particularly AmEx was known to do this. All of that aside, NXR seems to have a pretty good following. Most people say they are a great value. Good luck.

I have a viking 30 inch vdsc that has been installed for about a year and a half and am happy with it. I chose this range because I wanted a black range and I wanted dual fuel, we have to use a lp tank and did not want to have both the range top and oven dependent on the tank. I am a cook-something-quick-and-easy-that-my-picky-kids-and-picky-husband-will-eat-5-days-a-week cook so did not need a super high powered cook top, I almost never go above med-high. I do use the simmer a lot and it is not the best so I bought a simmer plate to help get an evenly low cooking surface. The burners are closed and have been very easy to clean but I have not had any overflows or cooking mishaps that would get anywhere near that part of the burners. The black, shiny surface that is below the grates of the viking does show every little bit of dirt and I do clean it frequently using soap and water and a dry rag to buff out water streaks. The oven seems to take a bit longer to preheat than my old stove and because it uses the broiler to help preheat you cannot stick items in before the preheat is done or you will burn the tops (I still sometimes put items in early but keep them on the bottom rack.) The oven also cooks a little differently than I am used to, cannot really explain how or why but it does leave most items moister which is nice. If you have concerns with how a viking cooks I would recommend finding a dealer that offers demonstrations, the dealer I bought from had demos all of the time.

I'd suggest posting in appliances for more input. There are a few experts who hang out there and not here. And I'd suggest taking a serious look at an induction range. I made the switch from gas a couple of years ago after researching on the appliances forum and would not willingly go back. Induction has all the power, faster adjustments and is easier to clean. And importantly in your situation the range itself isn't putting anything into the air to be vented. Most induction ranges have different electrical requirements from a standard electric radiant range so you would need to check whether you can swing that in your building.

This is the second year for my Falstaff, and so far I'm loving it. It's not pink, but deep magenta, fading to purple (and a nice purple, not a sickly one). The flowers are durable in rain, the flowers nod, which I like (and which might help them from collecting water). So far, not much frying in the sun (although smaller flowers with the 90F heat). Biggest disappointment: almost no fragrance, but when detectable, it is old rose. First flush flowers were about 3". Flowers don't flatten out but keep this cupped form. It's starting to put out a second flush now when WS2K is busily frying its first flush in the sun and mildewing. Most remontant roses (i.e. hybrid teas) here put out a nice first flush, then a few miserable looking flowers in the heat if any, then another nice flush in the fall. Falstaff mildewed a bit this year. We don't get blackspot here. Photo bloom color is accurate. In my tough climate, it takes a while for plants to grow. Planted in the spring of last year, it did nothing the rest of the year. This year the bush is very vigorous (like climber vigorous), upright, but not stiff, and the new basals are almost as tall as the bush now. The leaves are matte and nicely formed, very old rose. Here's the first flush. I hope it gets all big and gangly.

Have you considered Blue star, it meets your desire for simple with a big oven, and will boil water quickly. Some love the looks and performance of the open burner, others don't, but BS makes a sealed burner version as well
