Comments (26)We call it dressing and it's never put in the bird. This recipe is from my great grandmother (Mawmaw) and her sister (Boopie) who came to Texas on a covered wagon from Tennessee. The notes are how my mom makes it. Mawmaw & Boopie's East Texas Cornbread dressing 1 pan cornbread (she uses two packages of Corn Kits and makes it in a cast iron skillet, according to package directions) 1 can biscuits, baked (or one sleeve of crackers, crushed, if you don't feel like making biscuits) 2 cups onions chopped 1 cup celery chopped 1 stick of butter 4 boiled eggs (chopped) 2 large boxes of chicken broth (or broth made from turkey parts) salt and pepper to taste 1 tablespoon sage 2 eggs, beaten 4 to 5 bacon slices Crumble cornbread and biscuits in a large bowl. Lightly sautee (don't brown) onion and celery together in the stick of butter (she does this in the microwave in a large glass measure). Add the veggies to the crumbs. Add seasoning and boiled eggs. Mix well. Add the broth until it's a very moist mixture, almost soupy. Then add two beaten eggs and mix well. Put in a 9x13 pan. Lay 4 or 5 bacon slices acrosss the top. Bake at 350 for one hour or until brown on top. That makes about 10 to 12 servings. She suggests you make this the night before, refrigerate, and bake the next day. Comments (3)I solved this problem by putting a pair of metal heron statues in the water of the pond. The real herons think that my pond is already "owned" by those two fake ones, so they fly on to find another spot. Comments (36)I cooked the cornbread dressing in the crock pot last year for the first time. I cooked it in one of the old crock pots. First I sprayed the removal crock with non-stick spray, lightly packed the stuffing mixture in slow cooker. Covered and cooked on high for about 45 minutes to 1 hour. Then reduced to low and cooked for 4-8 hours longer. until the instant-read thermometer was 160F. It was beautifully brown and crusty on the bottom and sides. After Thanksgiving, I read about covering the top of the dressing with sliced onions or turkey wings before cooking. Comments (10)Eld6161, My chicken broth, that I make, could very easily be made vegetarian, just omit the chicken. You want celery, carrot, onion, garlic, and parsley. I save and freeze the scraps from other meals, but you could just use the whole vegetables. Cover with a good amount of water and simmer for an hour or so uncovered until it reduces. Strain through a sieve and freeze in 1/2, 1, and 2 cups containers. This makes a very mild broth. My dressing is a cornbread and stale sandwich bread dressing. If you want it, I will post. I use oysters, but have left out for grandson who is allergic. Use rice milk for moisture. Some vegetarians do eat fish and some don't. Like others said, by the time you use enough poultry seasoning, extra thyme, rosemary, and sage, that is what you taste. I would probably add some of the stronger mushrooms.
