Comments (42)Shoot- just wrote a long comment/question and it seems to have lost it. I just read this whole thread. I have cooked loads of turkeys but this will be first on convection. I have an almost 21# bird in the freezer (moving to frig tomorrow -Sunday). I usually brine but wanted to use less this year to be able to use the broth/drippings. I usually start breast-side down. I just read Pioneer Woman's article on trussing, so I am planning on doing that. I don't stuff but am open to the idea of putting butter and/or stuffing under the skin. (If it was going to be stuffed under the skin right before roasting, wouldn't it be okay to use my own stuffing recipe with eggs?) I have a digital probe thermometer that will beep when the set temp is reached. Question- How much salt is enough in brine solution and yet not too much to make the broth overly salty? I like MOIST flavorful turkey- I love gravy. I cannot stand the chokingly dry white meat my in-laws served years ago. ugh. Comments (11)Modified Atmosphere Packaging (MAP)[edit] Modified Atmosphere Packaging (MAP) is a technique used for prolonging the shelf-life of fresh or minimally processed foods. In this preservation technique the air surrounding the food in the package is changed to another composition. This way the initial fresh state of the product may be prolonged. It is the shelf-life of perishable products like meat, fish, fruits and vegetables that will be prolonged with MAP since it slows the natural deterioration of the product. MAP is used with various types of products. The mixture of gases in the package depends on the type of product, packaging materials and storage temperature. Meat, fish and cheese are non-respiring products needing very low gas permeability films and so-called high barrier films are used. The initial flushed gas-mixture will be maintained inside the MA package. Conversely, fruits and vegetables are respiring products where the interaction of the packaging material with the product is important and so low barrier or so-called high permeability films are used for these. Comments (20)I haven't catered but have prepared food for gatherings ranging from 30-50. The key, I have found, is having access to adequate pieces for serving/entertaining such large groups. In the past few years, I've prepared food for showers about 40 attendees, and a neighbor is a former caterer who has numerous platters, pitchers, glassware, vases, linens and so on that were so helpful. So much of this process, for me, was having pieces to store food that was prepped, and then later that was in line for serving. I can work in small kitchens as long as I have adequate storage and serving pieces. I can't speak to costs, as I do this for friends and family who chip in or for whom I'm doing this as a gift. I love the darkroom sink! I'm very picky about sinks, and find those little island prep sinks a complete waste of space. I have a single big sink now that can hold a sheet pan. My next kitchen will have a massive sink like that darkroom sink, and there will be 2 faucets in lieu of a main sink and prep sink....See MoreMore rose pictures...join me!
Comments (612)@Diane Brakefield Diane, what beautiful views! I love the light/color with the snow. I'm sorry you lost your cat. Persians are such beautiful animals. Fish/Seaweed only smells a little when I pour it into my spray bottle. Once it's watered down and sprayed, it doesn't seem as noticeable. I got sick of spraying the roses with the egg mix I was making and just stopped at one point over the summer. It's hard for me to say which repellent idea has worked best....I tried to mix them up. I read somewhere that if you throw deer off of their paths through your yard, they'll remember and stay away once they've changed their path/direction. I'm hoping that my yard stays on their "rotten egg/fish/milorganite avoid!" radar for at least a few more years ;) Earlier this summer after spraying the roses and putting milorganite down...I was 99% sure it worked. Hadn't seen a deer all spring when they're around most. Then one morning I woke up and saw a big deer up up on the outside of my fence, right in front of those 8 climbing roses on the fence line. Went outside and the big deer moved slowly into the woodline and then I noticed a little baby deer curled up. I backed off and kept my dog in the backyard for a week or two, let the mom raise the baby deer. Every morning I'd look out my windows and make sure the baby was still there curled up in the grass. The mom would come back every sunset to feed it and sleep with it. Eventually the baby could walk and marched into the woods with the mom. They never touched the roses though.... even if they did, I would have had a hard time getting upset with the two of them. @rosecanadian - I would looooove a blanket or sweater made of my sheepadoodles hair! Sometimes when I'm petting him I have to remind him that he's lucky I'm not Cruella. They have such soft hair hah....See Moreprovogal
