Rachel Ray's Turkey Tip (share yours too!)

I don't really watch Rachel Ray too much, but the TV was on in the kitchen and I overheard Rachel say that her Thanksgiving tip is to cook two turkeys instead of one large one (the idea being you can sleep a little later).

I must cook at least 22-24 pounds of turkey -- and I've always cooked a BIG bird.

I am not (necessarily) looking to sleep in (too much to do!), but her tip does have me wondering....

Would the cooking time vary a LOT by cooking two 11-pounders instead of a large turkey?

Are there other advantages, such as getting more breast meat with two smaller birds? Might the smaller birds yield juicier results?

I don't do anything "fancy" in terms of seasoning: rub with margarine, add S&P -- lightly stuff .

I don't have two ovens, so I am not even sure this is an option for me, unless the turkeys go in "sideways", meaning neck-end-first. (Could they?)

What if I were to cook an 11-pound turkey and a large turkey breast?? Is that doable?

My "tip": One year I accidentally cooked the turkey upside-down -- which made for a VERY moist and tender bird. I haven't done it since -- but I may. Turns out there are many who cook it this way on purpose!
