Moosemac's beans reminded me....

About a year ago, I was part of the committee preparing for our church's annual fund raiser....featuring grilled pork loin slices in BBQ sauce, sliced roast turkey in gravy, slaw, home made ice cream, pie AND baked beans.
The usual way is to buy canned beans and doctor them up and cook for a couple of hours in an electric roaster. But one of our committee, who is a dietitian with an advanced degree, decided to save some $$ and make beans from scratch.
She bought 5 pounds of dry navy beans and 2 pounds of bacon a jug of molasses and a pound of brown sugar, 2 pounds of bacon, a quart of Heinz Catsup and 8 oz of Frenches mustard.
She put it all together with the required amount of water in a roaster, 24 hours before we were to start serving, and set the roasters on low.
The next morning the beans were hot and gently simmering but hard as a rock.....after another 4 hours, still hard....and the same at 5 PM when the customers started arriving.
do you know why?
